Customer Reviews:
Not very helpful.......2007-08-15
I just finished a Cost Accounting class and the professor did not have us use this book! He used his own notes and said the book was not very good.
Opinion from an instructor.......2005-07-31
Unfortunately, I have to agree with one of the previous review. The book lacks consistency and logic. Just to mention one of the numerous flops - how you can talk about economic order quantity and not mention a material planner. The book is supposed to help an instructor. Well, it does the opposite.
Terrible Book.......2002-05-30
This book is garbage. It is just thrown together for the publisher and author to make money. It is a very superficial review of cost accounting.
Easy to follow........2000-08-24
I was pleased with with this book. At the end of each chapter, a demonstration problem is provided with step by step instructions. Also available are template spreadsheet at the Southwestern website which are very helpful in understanding some end of chapter exercises.

Students in regular and special accounting prgrams and nonmajors will also appreciate the selection of fully solved problems.
Customer Reviews:
very clear and thorough.......2007-01-11
It was very clear and thorough. It is a pretty guide review for the Clep exam, but you will need to study Principles of Accounting II also for the Principles of Accounting CLEP.
Great "Nuts and Bolts" Book.......2005-11-23
If a company is going to buy assets to turn a profit, it has to first get capital from somewhere, right? And in the course of making sales and providing services, it needs to literally account for the use of that capital. Lerner and Cashin make readers comfortable working with major sources of capital in an easy to understand way.
Chapters 3 through 8 are the heart and soul of the book. They explore common stock issuance, subscriptions and treasury stock, retained earnings and bonds. By doing the "Solved Problems" and chapter-end exercises, I came to a much better understanding of accounting mechanics pertaining to capital concerns.
The book is also very valuable for those seeking to better understand manufacturing accounting, cost systems and budgets, as well as financial statement analysis.
Consistently clear, the authors do an excellent job in helping those interested in accounting better understand the subject matter. They helped me - I hope you benefit too!
Review principles of accounting II.......2005-09-14
The delivery was good. The condition of the book was good (new book). I would not hasate to buy another book in the future.

Customer Reviews:
Good book, poor service.......2007-09-21
The book did not include the online content access and was damaged when I received it. When I returned the book I was charged for shipping, despite the damage (which I did not cause). The text itself is written well and lends itself to a quick and easy grasp of the material. The chapter ending exercises, both brief and extended, expand well upon the material covered in the text.

Customer Reviews:
Great seller.......2005-10-02
Book was a little more used than described, but hey for the price it couldn't be beat. To bad my sylabus was wrong and the professor changed the edition. Anyhow, seller was excellent. Fast shipping and I would reccommend.
My first accounting book.......2005-02-16
I used this textbook for my first accounting class and it was by far the best. Examples are all spelled out step by step and the numerous exercies and problems contribute to a higher level of understanding. Buy the workbook offered. It will save you a lot of time normally spent setting up the problem. Much better then some of the higher level books I have used.
Fundamental Accounting Principles.......2000-12-12
This text was VERY helpful. The illustrations and examples were enough to explain the topic without havung to read the entire book.. Also the problems given at the end of each section were very good. Some were tough; however, the author starts you out with easy problems and works up to the more difficult ones. This text definitely is a good learning aid.

Book Description
Written by a former restaurateur, this book presents the practice of restaurant cost control over its theory within real-world perspective that every experienced restaurant operator can recognize. Bringing together the authors' experience and knowledge as a corporate restaurant administrator, and an independent restaurant owner-operator, the book provides practical and realistic examples on controlling costs for culinarians as well as restaurant managers. An essential resource for any restaurant owner or manager.
Customer Reviews:
Second Edition Review.......2004-11-09
The reviews from 1999 are for the first edition. The second edition has been significantly revised. It is written for culinary professionals, culinary students and independent restaurant owners and managers. If the text is adopted, it comes with extensive teaching and learning materials on CD.
Too expensive.......1999-06-03
While I think this bood definitely has merit and is a very good guide for someone starting up in the restaurant business, I think it is overpriced. After all, it is still a paperback and I would have expected to spend that amount of money on a hardbound book.
An easy read, but too wordy........1999-02-14
Overpriced, redundant work. You can skip chapter 2, chapter 3 is the same and more. Not many people write on this topic, so this work is a useful tool.

Book Description
Gain the financial management skills you need to succeed, as a hospitality professional. Cost monitoring and cost control are indispensable components of the successful foodservice and hospitality manager's skill set. Through five editions, this book has been preparing students to enter the work force by helping them to develop these crucial financial management skills. Continuing this tradition of excellence, the Sixth Edition contains all of the features that have made Principles of Food, Beverage, and Labor Cost Controls the standard text on the subject, including: * Explanations of terms, concepts, and procedures. * Step-by-step descriptions of tools and techniques used to control costs. * A unique modular format, with each component covered in its own section. * Numerous skill-building problems, exercises, and projects. The book begins with a general introduction to key terms and concepts, as well as basic procedures for analyzing cost/volume/profit, determining costs, and using cost to monitor foodservice and beverage operations. The next two sections, "Food Control" and "Beverage Control," outline a four-step process for controlling each of the primary phases of a foodservice or beverage operation--purchasing, receiving, storing, issuing, and production--with specific techniques for each phase. The final section focuses on labor cost controls, and includes expert advice and guidance on setting performance standards, monitoring performance, and taking corrective action. Principles of Food, Beverage, and Labor Cost Controls, Sixth Edition equips culinary and hospitality management students with the knowledge and skills they need to perform one of the most important aspects of their jobs. PAUL R. DITTMER is Associate Professor in the Department of Hospitality Management at New Hampshire College in Manchester, New Hampshire. The late GERALD G. GRIFFIN was a faculty member at the New York City Technical College of The City University of New York.
