Anthony Bourdain is host of the Discovery Channel's No Reservations, executive chef at Les Halles in Manhattan, and author of the bestselling and groundbreaking Kitchen Confidential, Anthony Bourdain's Les Halles Cookbook, A Cook's Tour, Bone in the Throat, and many others. His latest book, The Nasty Bits will be released on May 16, 2006.

Heat is a remarkable work on a number of fronts--and for a number of reasons. First, watching the author, an untrained, inexperienced and middle-aged desk jockey slowly transform into not just a useful line cook--but an extraordinarily knowledgable one is pure pleasure. That he chooses to do so primarily in the notoriously difficult, cramped kitchens of New York's three star Babbo provides further sado-masochistic fun. Buford not only accurately and hilariously describes the painfully acquired techniques of the professional cook (and his own humiations), but chronicles as well the mental changes--the "kitchen awareness" and peculiar world view necessary to the kitchen dweller. By end of book, he's even talking like a line cook.

Secondly, the book is a long overdue portrait of the real Mario Batali and of the real Marco Pierre White--two complicated and brilliant chefs whose coverage in the press--while appropriately fawning--has never described them in their fully debauched, delightful glory. Buford has--for the first time--managed to explain White's peculiar--almost freakish brilliance--while humanizing a man known for terrorizing cooks, customers (and Batali). As for Mario--he is finally revealed for the Falstaffian, larger than life, mercurial, frighteningly intelligent chef/enterpreneur he really is. No small accomplishment. Other cooks, chefs, butchers, artisans and restaurant lifers are described with similar insight.

Thirdly, Heat reveals a dead-on understanding--rare among non-chef writers--of the pleasures of "making" food; the real human cost, the real requirements and the real adrenelin-rush-inducing pleasures of cranking out hundreds of high quality meals. One is left with a truly unique appreciation of not only what is truly good about food--but as importantly, who cooks--and why. I can't think of another book which takes such an unsparing, uncompromising and ultimately thrilling look at the quest for culinary excellence. I got this book because my husband heard an interview on the radio and thought I would like it since I love to cook. It was interesting but spent too much time, for me, on the politics of working in a restaurant kitchen and not enough on the workings of food in a restaurant. I bored with the personalities and gave up trying to figure out who was who.

This guy, Bill Buford, is pretty amazing. Despite the danger of slicing off his hands entirely (an accident that he somehow manages to repeat) under various huge, sharp, professional knives, he insisted going (back again and again) to Italy to learn about things so obscure even professional chefs wouldn't have much idea about.
If you're looking for a book about Batali, this isn't the most comprehensive one, but it's scathingly honest and if you really live and breathe food, you'll gain a whole lot more than goss about the inner workings of Batali's businesses. It gets a bit soppy at times - a bit too "Tuscany is beautiful, and Provence is the ultimate foodie heaven", but only fleetingly, and all can be forgiven once you read about the author's hilarious effort to cook a whole pig...

The chapters on Mario Batali and the dynamics of his kitchen were really interesting and engaging. I was intrigud by the sections on Marco Pierre White as I had just read Gordon Ramsey's autobiography in which his tempestuous relationship with White plays a significant role. The rest of Buford's book is just too tediously, self-indulgently written to the point where it killed my interest in the underlying subjects of pasta making and butchery (I ended up skimming page after page as I just couldn't take it). It reminded me of a computer spitting forth every bit of information in its memory regardless of relevance or interest. Just too many tedious, boorish details.

I'll offer right up front that Bill Buford offers in this book what I have been missing from Anthony Bourdain's books--both offer a wonderful no-holds-barred approach to the restaurant culture and the madness that lies behind the swinging kitchen door as well as a sheer love for food, but while Bourdain has much more of the insider appeal and the edge of experience from which to tell his tales, Buford is, hands-down, a durn better writer. This book is an intense view of the world of Italian food. It is researched and experienced. Buford made a reputation with Among the Thugs of going deep into his subject matter, culminating (in Thugs) in being beaten by cops as though he were one (after he had worked hard to be one of them). Rather than take a removed, journalistic perspective, researching from afar, Buford dives right in and learns everything from the inside.

In this book, Buford comes under the wing of rockstar-chef Mario Batali, and though he may fancy himself a foodie who could have become a renowned chef himself had he put in the time, the work of the kitchen turns out to be a whole different world. From almost day one, Buford learns that there is a proper way to dice carrots (which he didn't do), uncovering the first of many lessons I would learn through this book that would let me realize that I, too, am but an amateur in the world of cooking. Buford learns that one of the first secrets to being an ace chef is being able to cook the same dish the same way each and every time, so that those who come in and enjoy it one night can come in on any other night and still have the dish that they loved so well.

From there, the lessons don't get any easier. Moving up from prep to line cook creates its own hazards (literally), but within it all Buford maintains his cool (in his own way) and becomes a student of food. This eventually leads him to take some trips to Italy, where he tries his hand as an apprentice to making pasta and, ultimately, as a butcher. The book leaflet is a little misleading here, for Buford learns more about the proper way to butcher a pig carcass rather than slaughter the pig itself--this is where Buford divides from Bourdain, who wanted to be involved in the actual killing of a pig in his quest to become closer to the food he loves so much.

It's hard not to make corellations between Bill Buford and Anthony Bourdain, maybe because both have such a deep respect for food and the craft of making it. Bourdain, of course, speaks from the inside, and that might be his ultimate downfall. His TV appearances are golden, but when translated to the page, books like Kitchen Confidential and A Cook's Tour have the essence of foodiness that I like, but the pages eventually get rather unreadable. Buford has a very engaging style and is good at developing moments of humor and manicness and pure horror, and the gruff relationships between the cooks seem to go right up the same alley as Buford's previous work with English soccer hooligans. His research into cooking history (for example, when egg was first used in making Italian pasta) is wonderful, though I wasn't so intrigued in his chapters that delved into the histories of some of his colleagues, including Batali. In the later chapters, Buford's writing became almost a little too thick, like (excuse, please) munching constantly on duck in a thick, rich sauce, but then getting a little overwhelmed and wanting a bit more of a respite before being bombarded with another round of deep, deep flavor.

In all, this book becomes the story of a foodie's journey into discovering the essence of being a chef and even attaining that, in a way. Though I was a little let down by the ending that suggested a sequel in the guise of conveying a deeper sense of yearning in Buford's curiosity about food, the narrative is quite secure throughout.

The ultimate foodie book will be written by someone with the passion and experience of Bourdain, but with the skills and desire for further knowledge of Buford. Right now, this would seem to be the best case scenario we can find, but I hold out hope that there might be another out there who can mix absolutely everything together.

Este libro lo conocí al cursar la licenciatura en FIMEE, ahora que lo compré opté por la 5a Ed que esta mejorado. Es muy util para asimilar los conceptos y entender los fenómenos. Me gusta mucho por que creo que está muy completo y se explica muy bien. Es un libro que todos los Ing. Mecánicos deben tener. Los ejercicios son muy variados y de amplias aplicaciones, ello permite ver la amplitud de estudio de esta área de la ing. Vale la pena comprarlo (les sugiero la versión en ingles).

This textbook is one of the best I've ever used. Incropera and DeWitt do a great job of explaining convection, conduction, and radiation. I have heard that the mass transfer portion of the book is lacking however, I am an ME major so its not an issue. The covering of conduction is especially good, it goes into great detail math wise although its well presented so you don't have to be a mathematical wizard to follow along. The book goes into a little bit of heat exchanger design, not very much but its a good introduction. If your instructor requires this book for your heat transfer class consider yourself very fortunate.

I didn't read these in the correct order, but that was okay; it's a tiny bit better if you do, though. I loved all the psy/changeling series, can't wait for more!
Very decent alpha heroes, and wonderful, competent heroines. Lots of suspenseful action. And the world building that goes into this series by Nalini Singh is awesome. Every novel is so compelling, so fascinating. The secondary characters are also good, particularly if you follow them through the series. I love the cubs.

I'll bet the people at Berkley Sensation are dancing little jigs in delight for having this wonderfully talented writer on their list. I read SLAVE TO SENSATION and was bowled over by Nalini Singh's talent. Now I've finished VISIONS OF HEAT and cannot believe how seamlessly the two books work together. If at all possible, I would recommend reading SLAVE TO SENSATION first. It lays all the groundwork for the paranormal environment where the books take place. VISIONS OF HEAT can be read as a stand-alone book, but I am personally glad that I had already met so many of the characters depicted in this book. It was wonderful to revisit Saschia and Lucas along with all the other Changelings from book one.

Faith NightStar was unaware of the fact that her subconscious had been preparing her for the changes which were about to take place in her life. Living in total isolation, within her own compound, she had time to read anything and everything which caught her interest. Only later did she see that she had been choosing reading material which would help her understand the world she would walk into when she went in search of Saschia Duncan, the E-Psy who had escaped the PsyNet shortly before. Faith needed the empath to tell her why she had begun to "feel" emotions during her dreams. Dreams which had become increasingly dark and frightening. Due to the Silence Protocol, Psy did not feel any emotions. Was this a sign that Faith was beginning to go insane? If her handlers thought so, she would be placed under protection, used as long as she could predict financial data accurately, and then be left to exist within her deranged mind until her body finally died.

Vaughn D'Angelo was a true alpha male in personality, even though he was not the alpha of the Changeling pack. His interactions with Faith were so crucial to her ability to survive in the world outside her bubble existence. His past history explained why he was always much closer to being jaguar than human. Too many weeks on his own at a young age had left him closer to feral than human. Together these two damaged individuals helped each other through feelings of guilt and fear so that Vaughn could claim Faith as his mate, and she could submit to all that term meant.

I loved it. Some reviewers wanted it to be "hotter". Not me. With these books, the story, the plotline, the building of block upon block is the ultimate pleasure. Yes, there are sensual moments. No, they are not excessive. I look forward to book 3, CARESSED BY ICE, due out soon. Nalini Singh is peppering her books thusfar with lots and lots of potential heros and heroines for future adventures. I look forward to many stories in this fascinating universe.

Having heard that this book was too much like the first one in this series, I was expecting a letdown. I can happily say that I definitely *don't* agree with whomever made that assessment!

Of course, there are some similarities. The first in this series - Slave to Sensation - was about a female Psy overcoming her lifelong Silence conditioning to learn how to feel again, helped and encouraged by her attraction to a Changeling leopard.

Visions of Heat also chronicles the struggle of a female Psy to overcome her conditioning and learn to love a Changeling, this time Jaguar. But other than that, it is quite different.

Faith, the heroine in Visions of Heat, starts off in a much more difficult place than Sascha did in Slave to Sensation. She has been isolated all of her life, is constantly monitored by others, and her talent hasn't given been giving her flashes of emotion all her life. She is basically fully Silenced. But her talent is manifesting some new twists - very uncomfortable ones - and she needs to find a way to manage them without causing her monitors to clamp down even tighter.

So, she sneaks out to see if Sascha can help her. Sascha does, but mostly, it's Vaughn, the Jaguar that intercepts her in Changeling lands and immediately begins challenging her conditioning with constant touching.

At first she is afraid that all this touch and emotion Vaughn is exposing her to will damage her, cause her to shut down entirely, especially on top of the stresses her foresight talent has recently been giving her. But Vaughn lets instinct guide him and quickly learns when to push and when to give her some space.

Eventually she is able to throw off her conditioning enough to be with Vaughn. Vaughn is a quintessential alpha hero - strong, possessive, challenging and just a little bad. Any woman would be thrilled to have all that intensity focused on her, and Faith isn't stupid. She figures out that it's worth the trouble.

These characters have to work pretty hard to get to their happy ending and with Faith's unique talent, there is no guarantee of forever. But I found this story very satisfying, while still leaving me curious about the next installment.

This author has created an incredibly detailed world for this series and introduces new, interesting ideas in each book. I'm very excited to see where it goes - not just with the main characters of each romance, but with the overarching concepts she is explaining as she goes along. I can only wish I had an imagination like hers!

If you enjoy something different, something creative to go along with the emotional ups and downs of the hero and heroine, pick up the Psy-Changling series. If you're like me, you'll be thrilled you did.

For anyone who hasn't read the first book in the series (Slave to Sensation), Visions of Heat is set on an alternative history Earth, where the planet is populated by three races: - Changelings - shapeshifters who rely on their animal instincts, The Psy who are emotionless and cold, and human beings. I would recommend you read Slave to Sensation first if possible, as there are plotlines started there that continue into VoH.

Faith NightStar is an F-Psy (F-foresight) tormented by dark visions (no pun intended :)). Unsure of what is happening to her and not wanting to reveal her fragile state of mind to the Psy Council she seeks out Sascha Duncan (Slave to Sensation) the only Psy known to be free of the Psynet. It's while she is looking for Sascha that she meets Vaughn D'Angelo, a jaguar Changeling who is inexplicably drawn to Faith. (I note here that Vaughn is an incredibly alpha hero, almost to the point of being unbearable on a couple of occasions.)

I've read on some reviews that there is a preference for Sascha (the heroine of StS) over Faith. I however, like Faith, she's a contradiction - incredibly fragile, but at the same time so single-minded she manages to push herself farther than she thinks she can go.

It almost seems like the relationship between the two of them shouldn't work. Vaughn the irresistible force willing Faith to take on more. Faith the immovable object giving in. And yet they fit, in a way I don't think either of them would be able to with anybody else. I wish the book had been longer so we could see this relationship evolve even further.

One of the things I really enjoyed was the continuance of plot threads from StS - we meet up with Sascha and Lucas again, and it's interesting to see how much Sascha has changed between books. There has also been fallout from the incident at the end of StS and this is still being dealt with by the Psy Council, who, if possible, got scarier. We also find out more about how the Psynet itself functions and get a hint of how this will impact the Psy. Visions of Heat is perhaps not as intense as Slave to Sensation and we're now clued into how this alternative world works; but there is an awful lot here to mull over.

I very much like how the overall arc of the series is developing. Nalini Singh starts to increase the tension in Visions of Heat and I can't wait for Caressed by Ice.

I finished this some time ago. Actually the day it came out but didn't get around to reviewing it until now.

Yes I am still happy with Nalini Singh and this series. Can't wait for the next one!! The series has not yet lost focus on the main plot. The character were very well built and story very well written.

Highly recommended.

Ever since I read the first book in the Breed series, I have been drawn into the fantasy world of Lora Leigh's genetically altered-humans. Kane and Sherra's story is also what I have been waiting for, wanting to read more about their tragic affair.

Eleven years ago, Sherra fell in love with the man who has not only brought her physical pleasure, but a safety haven as well. He had come to her and made her feel like a woman loved, only to leave her with the promise of returning. As a Breed, she was created, not born; trained to be a soldier. He was the sole thing that made her think there was more to her than a genetically engineered creature. But his desertion killed whatever feelings she had. For over a decade, she survived for her Pride alone. But despite how hard she tried to forget him, her genes yearn for the touch of her mate, constantly tormenting her with those bittersweet memories. Now as she comes face to face with the man who destroyed her heart and her baby, Sherra has only revenge in her mind.

Kane Tyler was one of the soldiers sent to the Genetics Council Labs. Realizing what the Breeds were being subjected to, he made a promise to Sherra that he would return and rescue the whole Pride. I have enjoyed reading about these two from the very beginning and enjoyed how Kane has constantly taunted Sherra in the hope of destroying her defenses. It was good to finally read their story and see them appease the gnawing hunger that comes with their need for each other. Some moments are bittersweet, adding to the poignancy of their relationship. Lora Leigh continues with this addictive series and she certainly knows how to keep her readers wanting more by giving us glimpses of the other Breeds and hinting on the stories to come in the future. I am looking forward to reading more of her novels.

Boy, does Lora Leigh know how to ride sex scenes. I had to make sure that I was reading the book by myself. I made sure not to bring it to read in the doctor's office. However, I love all of her books!

This book is graphic as are all of hers. I was so glad to read the story of Kane and Sherra. I waited for a while for this one. Sherra is the one with cat DNA. She knew Kane back when she was in the labs. She felt that Kane just left her to be experimented on and let their child be taken and she feels betrayed. Kane was under the impression that Sherra died at the labs. Well, imagine what they think when they see each other again. No, it isn't good to see you.

Sherra acts cold and mean to Kane. She ignores him, yells at him, wants to hurt him. Kane keeps trying to get her back into his arms. However, he is trying to be cool about it. Well, I am sure that you can imagine the ending. These books are pretty predictable but fun. I do not even think the ending matters. It is the heat and sexual tension between these two.

The animal breeds books are a great series to read. If you liked this one, I recommend starting with the Breeds book one. I am sad that my library does not carry her books. However, I do not hesistate to buy them.

I couldn't wait to read this book from the lead in to it in the previous book. Kane was quite a man and Sherra was his perfect mate. All the trials they went through really made me feel for them. If you love the Breeds series you'll love this book.

    One would think for $150, this book could have been printed on heavier weight and better quality paper. Either Wiley went overboard in trying to lighten physical weight for the student to carry, or they're trying to sqeeze even more money from already ultra-high book price mark-ups.

    I also have the Fourth Edition -- That book has a heavier cover and tough paper pages. With this one, you need to be careful not to tear the pages, and forget highlighting as the ink will soak though 2 - 3 of the pages underneath. Dampness/humidity ... the pages warp and wrinkle.

    The text itself is top-notch.

    heat transfer, exchange of energy in the form of heat between bodies or parts of the same body at different temperature. heat is transferred by convection, radiation, or conduction. although these three processes can occur simultaneously, it is not unusual for one mechanism to overshadow the other two. for example, heat is transferred predominantly by conduction through the brick wall of a house, a pan of water on a stove is largely heated by convection and eart receives heat from the sun almost wholly by radiation.
    heat exchangers are devices that provide the flowage thermal energy between two or more fluids at different temperature.

    As far as textbooks go, I thought this was an excellent one. The text itself is useful, the example problems are relevant to the problems related to each chapter, and the theory is clearly mapped out.

    Our class used this text to supplement another, though I thought the course could have stoof alone on the Incropera and Dewitt text. An excellent introduction to the topic.

    This book has depth! There are more than 200 recipes that cover a range of cuisines. The recipes also range in sophistication and difficulty. It is an excellent representation of American cooking.

    By default, Chef Garvin has captured the black foodie thing. Yes there are soul food classics like candied yams. But how about sweet potato mousse and pan-seared scallops with morel mushroom sauce. Like his show, this book makes four-and five-star eating experiences approachable and attainable for those who have been afraid, complacent or sheltered.

    This book has recipes for the novice cook. More importantly it is the type of book that will still be relevant as your skills increase. There are about 24 color photos of the food; I would prefer more.

    Now for the fun part. This man understands his audience! There are more pictures of him than of the food (and I wouldn't have it any other way!) No other celebrity chef could get away with this, but perhaps G. Garvin is the ultimate celebritiy chef.

    I'm a cookbook addict, so one of favorites is to go to bookstore and browse through new stack. Found this one fascinating, due to breadth of recipe collection, which author states up front is collected from his family, friends, and his restaurant career. Thus, we find old reliables, and new creative ones as well. Lots of something here for everyone. So depending on your target eaters and the time and ingredient limits, one can find wide range of culinary delights here for every occasion and chef abilities.

    I was particularly attracted to this due to offerings such as: Corn bread, Bacon and Blue Cheese Mashed Potatoes; Jalepono Seafood Dip; Spinach, Mushroom and Goat Cheese Ravioli; Pistachio-Crusted Halibut with Lemon-Chardonnay Sauce; Cauliflower, White Rose Potato and Crab Bisque with Truffle Oil; Sweet Potato Mousse. Nice color shots of select recipes!

    I also appreciate his revealing of his career path and faith commitment as well. Well done, G. Garvin, I'll be looking for your next output.

    This book is a resource for understanding/solving complex heat transfer. There are no pages wasted on useless information, just vital information pertinent to the topic. The book is well laid out and well referenced. The chapter on heat pipes is a bit lacking. Overall an excellent heat transfer reference.

    You could spend the rest of your life reading this book! It would be useful for any professor or A student or other intellectual studying the material in depth. But for a practicing engineer who has little available time to ponder the specifics, it would take a "lot" of effort to find material that could be put to work in this text. If you are interested in deriving the equations you need yourself, or if you're analysing a unique design, then this is the book for you. But if you are busy with standardized systems and technology, find another reference.

    I was expecting more tables and equations especially for natural convection external flow. There is also very little useful information about forced convection external flow. I also would have liked to see some sample calculations to demonstrate how to use this book better.

    There is plenty of theory despite the product's description and most of it is probably unnecessary for a handbook. It's more like a big, expensive text for heat transfer than a handbook. A person would have to be an engineer, mathematician, or physicist to deal with the level of mathematics presented in this book.

    There is a fair amount of information about internal flow for both forced and natural convection, but this book's value is quite limited. I am dissappointed with this book and would not purchase it again if I lost it.

    This is not an introductory book on heat transfer! Instead it is a thorough treatment on heat transfer in a stringent an extensive manner. This book places greater emphasis on correctness than "easy-to-understand-ness". However, if you do read it, you gain a lot compared to most introductory heat transfer books. If you are interested in forced convection heat transfer, this book gives well documented equations and charts for a great number of shapes, though mostly internal flow. This is a very serious book for serious engineers!

    I found very useful the way thermal conductivity was approached. I was used to solve simple problems by means of "Temperature response charts". Now it is possible to use formulas instead of graphs.

    I purchased this book because of Mr. Ganapathy's fame in the subject area and the attractive title of the book. My primary interest is in waste heat boiler design in petroleum refining applications. My comments here pertains to this area only.

    The book gives a very brief survey of various types of boilers and HRSG's and their operations. The chapter on "Heat Transfer Equipment Design and Performance" offers simple published correlations to estimate parameters in boiler and HRSG designs. They are good for rough performance check but I will not use them in actual designs. In fact, I doubted Mr. Ganopathy uses these simple correlations in his own designs.

    Mr. Ganapathy, despite his extensive experience in the subject area, did not spend much ink on critical design issues such as the danger of thermal induced dryout and differential thermal expansion of different components and design methodologies to avoid them.

    This is a good book for someone who wishes to gain a basic understanding of boilers and HRSG's. It has little value for those who are in the business of actual designing such equipments.

    I bought this book for my husband, who is an aspiring pastry chef. He absolutely loved it. Alton Brown's sense of humor shines as much in the book as it does on his tv show. There are so many great tips and recipes! This book was well worth it.

    If you watch the food network you know Alton Brown. His books are as good as the show.
    The recipes are good and he explains Why you do what you do.

    To qualify as a great or even good cookbook, it's important that the recipes be accurate. It's just not enough that the book and author are highly entertaining.
    The newly "edited" edition is still filled with mistakes and that's just wrong on many levels, the first of which is wasting the consumers' time and money on preparing recipes which fail because of typos.
    The responsibilty to make sure that recipes are correct is ultimately Alton's, since he's the guy cashing in on the deal, plus it's his name attached to the product... so who else am I going to blame?
    My heavy duty KitchenAid Mixer fell off the perch, as they say, after struggling with the Focaccia dough (page 260). It needs at least 1 cup more water and the 4 tsps. salt (even Kosher salt) is way too much, let alone more salt sprinkled on top, just for good measure and guaranteed water retention for the next week.
    I would happily cut Alton some slack here if this were not the "corrected" edition and if this were the only recipe with typos, but right now I'm a bit ticked off that I must shell out at least $300.00 to buy a new mixer.
    Is it too much to ask that a "great" cookbook have accurate recipes, hmm?

    Alton Brown is known for the unconventional. Yet instead of being heretical he always makes you wonder why you weren't doing it his way in the first place. This book is a fine example of that. Organizing by mixing method is not new. Complete devotion to it is. Carrot cake a problem for you? Maybe it's because you never thought of it as a muffin. AB keeps drilling in and underscoring the importance of this type of classification to make you a better baker. I love that he refused to repeat the mixing directions for each recipe. Learn them or if you must, use the nifty flaps to remind you.

    As with "I'm Just Here for the Food," the material is dense, but he tries to make it digestible, pun intended. Quirky drawings and humor do their part. This book is for the curious baker; there's a lot of science here. It works better in the TV show, but the book is still accessible. There is a large number of recipes and they are pretty versatile.

    I wouldn't buy the book for a novice cook, unless I knew he/she was into food science. I think it's great for the intermediate or advanced baker. This type of knowledge helps you fix common errors and move to the next level."
