Perfect supplement to the text!.......2007-09-15
The tonal harmony workbook contains exemplary exercises to provide efficient practice of the material covered in the text. The audio CD are definitely helpful in supplying aural guidance, and the Final Workbook CD-ROM is perfect for the Theory student (not yet in need of the complete, and extremely costly, version of Finale). Overall, the Tonal Harmony text and workbook are a great asset to any student of Music Theory over the lifetime of his/her musical career.

Plated desserts--artfully arranged confections prepared from multiple components--are a modern restaurant mainstay. In Grand Finales, authors Tish Boyle and Timothy Moriarty present 53 such creations, the work of 23 leading American pastry chefs who have been challenged to make "neoclassic" versions of traditional desserts. Thus, for example, tart tatin, the venerable French apple galette, is reconfigured by chef Lincoln Carson as Pear Tatin with Vanilla Ice Cream and Caramel Sauce. Like the other recipes in the book, the pear tatin requires multiple subpreparations (in this case 5, though 7 to 10 elsewhere is not unusual); frequently large recipe yields (72, in one case), ingredient quantities given by weight, and restaurant-ingredient "call-fors" (like isomalt and trimoline) further alert us to the fact--unstated--that the book is for professionals. This said, general readers may well be intrigued by the talent and technique on display in 105 color photos of the unquestionably gorgeous desserts, and by the useful, often fascinating information on pastry history and production that the book provides.
Organized by classic dessert categories or fare, the book offers a wide range of "reinterpretations," including White Chocolate Key Lime Tart, Passion Fruit Baked Alaska with Coconut Marshmallows, and Ginger and Quince Napoleons. A preliminary chapter introduces readers to the chefs--among them (in addition to Lincoln Carson) teacher and baking-book author Nick Malgieri, Jacquy Pfeiffer and Sebastien Cannone of the French Pastry School, and Chris Broberg of Manhattan restaurant Lespinasse. Offering insights and personal vignettes, the chefs help spin the historical and pastry-career investigation that follows. An illustrated chapter on sugar work concludes the book, along with a glossary of classic dessert types. These latter sections are valuable resources in themselves, and should engross all dessert makers, from the home-based to those who produce, or want to produce, stellar restaurant sweets. --Arthur Boehm
Book Description
"A Neoclassic View of Plated Desserts demonstrates both the subtle and theatrical pizzazz of a talented collective of visionaries." -Andrew MacLauchlan Executive Pastry Chef, Coyote Cafe "A brilliant addition to Tish Boyle's and Timothy Moriarty's series of cookbooks. This dynamic duo has thoroughly translated the recipes of some of our country's leading pastry chefs with immense ease and perfection. It is with enormous admiration that I recommend this cookbook to anyone searching for a greater knowledge of desserts." -François Payard Owner, Payard Patisserie & Bistro Author, Simply Sensational Desserts "It is the purpose of a neoclassic dessert to isolate the integral elements of a time-honored classic and transform its components to produce a dessert with the grandeur demanded by today's consumer. The pastry chefs who contributed to this book have provided recipes that do just that-and they do it magnificently!" -Bo Friberg Chef/Instructor, The Culinary Institute of America at Greystone

Great book!.......2004-07-15
I'm a pastry student. I bought this book because I needed ideas for my projects. This book presents classical desserts with a modern twist. A very useful resource.
Cool Book.......2004-01-26
I thought that this was a great book. As stated above; by other reviewers, this is not a beginner's book although not one that is entirely impossible for beginners to follow. I bought this book for reference for an upcoming ACF sanctioned event. I am rather new to this field but will be competing in it. It has many great ideas and alot of the deserts where displayed beautifully. The preparation of many garnishes where not explained but these are easily found on the internet.
I recommend this book to anyone looking to not just excel but have fun in the pastry field.
review on pastry.......2001-11-27
I feel that this book didn't project the pastry that people are interested in today. Pastry is like a fashion show, you put your best most tasteful and fashionable out to the public. The fashion is not overpowered by the accessories.. The dessert should be able to project itself alone.. In this book the desserts were lost among all the garnish..
Not for beginners!.......2000-10-09
I agree with the previous reviewer this book is not for beginners. BUT what a book! The recipies are great, and presentations wonderful. The portions, sometimes serving 20 need to be reduced, and measures are in weight (took me a minute with 10 oz eggs). If you're a veteran baker you'll have a book that challenges-- and rewards with plenty of wow appeal at your next dinner party.
Top Resource For Pastry Professionals.......2000-06-25
I highly recommend this book to pastry professionals and students, skilled amateurs, and aficionados of fine food photography. As the pastry chef of a large Chicago hotel, I am frequently asked to create elaborate showpieces and spectacular plated desserts for banquets and VIPs. Inspiration for these creations is sometimes swallowed up by production demands. A Neoclassic View of Plated Desserts has been an invaluable resource for ideas, presentations and techniques. The photographs are not only dazzling, they are also instructive. The recipes are well-written and tested (measurement are in grams and ounces, too!). The sugar chapter alone (by Ewald Notter) makes the book worth buying.

The best of the Grand Finales volumes.......2005-08-06
Of the three plated dessert books that Boyle and Moriarty made together (the other two are Grand Finales: A Neoclassic View of Plated Desserts, and A Modernist View of Plated Desserts), I would say that this one is the best. The pictures here are as gorgeous as always, but the presentations and recipes are much more feasible than the other two. Unlike a lot of the dishes from Modernist View, these ones are actually servable in a restaurant, or at a dinner party. They are not over the top dishes that are just for show. I would give this 4 1/2 stars if I could. The one thing that prevents it from being a 5 star book is the lack of glossary and the constant use of 'non-edible garnishes'. I am not a fan of huge sugar garnishes that no-one is going to eat, or if they do it would break their teeth. Don't get me wrong, they look really pretty, but I believe that everything you put on the plate you should be able to eat. Just difference in styles, I guess.

I'm a pastry student in Peru and I just can tell all the people that love pastry that this the best book I ever seen and I recommend a lot
tough, but fun.......2001-11-11
A very, very awesome book. You have to be hard core to want this book. It took about 5 hours for me and some friends to make one of the desserts, but we had a blast. It measures everything out with wait, so you don't have to worry if you bought the jumbo eggs when the recipee assumes you are using large. If you like cooking, buy this book. If you don't like cooking, I still say buy this book.
The sorbets alone are worth the price of the book

Better than Expected.......2007-07-05
After all the reviews I read regarding this book I had expected something good and, still, it was better than expected. So good, in fact, that I read it a chapter at a time because I wanted to let it sink in.
All in all, well worth it: check it out.
Awesome!.......2007-06-06
This is one of those books I read over and over again. I have read it probably 20 times since my first reading. Calvin Miller puts biblical stories into narrative poems that are so well written they force you to turn the page again and again. This book is the first in the Singer Trilogy, followed by The Song and The Finale. It is a poetic retelling of three biblical books: The Singer parallels the 4 Gospels, The Song retells the story of Acts, and The Finale is Miller's version of the book of Revelation.
Miller writes explicitly Christian fantasy in these books. He is also widely known for his non-fiction AND Christian life application books.
The Singer is a powerful retelling of the life of Christ, where instead of Jesus and The Gospel you have the Singer and his song. His song, if you are open to it, can bring healing and restoration. The World-Hater, wants to destroy both the Singer and his star song. Miller's words moved me to tears the first time I encountered them. The story is so well written, it can be read over and over without losing its freshness. The book is also excellently illustrated by Chicago artist Joe DeVelasco. The drawings done in pen and Ink style add to the power of the story by transporting you into the events.
No matter how many times over I reread this book, it is always fresh and new and draws me into the story of Christ in a different way. It is truly a classic and a treasure for any bookshelf. Each time I pick these up and reread them, I find a deepening of my relationship with Christ, and of my prayer life.
Miller also has a Symphonic Trilogy that retells different stories from the book of Genesis. The two I owned were A Requiem for Love and A Symphony in Sand. As far as I can tell, there are also 2 stand-alone books by Miller in this style that are often compared to Tolkien's Lord of the Rings and Lewis's Narnia. They are The Valiant Papers, an account of a guardian angel's experiences, and The Philippian Fragment, the retelling of the book of Philippians from the New Testament. I have owned most of these and lent them out to not be returned. I now have The Singer Trilogy, Valiant, and Singer Trilogy 3-in-1 hardcover. Over the next few weeks I will review those I still have, but cannot encourage you strongly enough to pick them up if you find them in a used bookstore. They are all great.
Over the next few weeks, I plan on reviewing some of the others that I still have from this author. And if I find the others again, I will review them. (It has just been too long since I lent them out and did not get them back for me to review them from memory.)
Other Miller Books:
The Singer
The Song
The Finale
The Valiant Papers
The Philippian Fragment (Currently OP)
The Singer Trilogy.......2007-05-15
I thought I did a review for this last week but it didn't appear to have gone through. This is a great book and anything Calvin Miller writes is worth the time and expense. I had read "The Singer" before, so when I saw the trilogy was available in one volume, I knew I had to buy it. I can't imagine anyone would be disappointed. It's really a must have!
The best thing written since the canon was closed........2006-12-16
I first heard of The Singer Trilogy while working on my Master's degree at Southwestern Baptist Theological Seminary. Dr. Calvin Miller, the author of the series, was the speaker for chapel services. The professor in my class before chapel said that Dr. Miller had written The Singer Triology which consists of The Singer, The Song, and The Finale. He said it was the best thing written since the canon was closed. I rightly understood this to mean this was the best thing written since the Bible.
The Singer Triology is a retelling of New Testament events, including the ministry of Jesus and the founding of the early Church. The books are religious historical fiction. They are excellent and an easy read. They are a must for any Christian library. The series is as timeless as the Bible itself.
All three books read and reviewed by Jimmie A. Kepler.
Poetic allegory of God's love.......2006-10-31
It has been said that some read the Bible as a "user's manual" of rules and regulations for the things they should or should not do. In so doing, the law of God becomes a formula that turns God into a vending machine with the Christian dropping in the correct currency to gain what it is he wants. Such reading misses the entire point of scripture. Poetry is, in contrast, the language of love. Love does not look for formulae and doctrinal hair-splitting, love just pours itself out in sacrifice and adoration of its object expecting nothing in return. Calvin Miller reminds us of that underlying message of the gospel in the language of love so we cannot mistake it for something else. If you are a self-appointed doctrinal purity committee member, you will find a lot from this series to dislike; that is a given. But if the Bible to you is more love letter than user's manual, then you will find this series quite enjoyable and thought-provoking. The language itself is inspiring and enlightening. It will be hard for the poet in you to put it down once you begin.

The ultimate presentation of Ashley Wood's amazing sketchbook. Take one part sold-out Sencilla Fanta, combine it with a plethora of all-new and never-before-seen sketchwork from Spectrum Award-winning artist Wood, and you get this 400-page grand Finale!
Customer Reviews:
just good........2007-05-22
It's not what I expected. It's only black and white quick sketches with marker and pencil. There is only 10 or 15 images is really good. The others are like Ashley made them while talking on the phone.
He is a great artist but I think he is not that great on quick sketches.
Beautiful........2007-05-08
Ashley Wood's "Sencilla Finale" is a collection of sketch book drawings and illustrations from 2000 to 2006. Though Wood has many fingers (and maybe a toe or two) in many of the comic industry's pies, this book stands out as an omnibus for what may go on in the artist's head. There are no stories to tell here, ladies and gentleman. This is pure, black and white (literally) drawing at it's finest.
Wood's drawings are a result of work with pencil, marker, brush, ink and chisel tips. His is a classic approach to traditional figure drawing and the contemporary mechanized guns and robots. Yeah, I just wrote that. The beauty in Wood's work is his near effortless ability to exploit each device individually and create a number of different marks with, what is sometimes, just one tool. This book just may be mandatory investigation for an art student in any capacity.
Though the book can be described as raw, it would be a hard argument to call this series incohesive. The artist seems to make a nod towards elements of film noir (those being femme fatales, black shadows and bold lines paired with troubled men who could be friend or villain), retro styled robotic science fiction, sequential story telling, and maybe a hint of urban art or graffiti. Interspersed throughout the book are smooth line drawings of suggestive pin-ups that act as a counter balance to the machismo of firearms, man and machine. That being said, this isn't a book for your little one's break time between kindergarten and afterschool cookies.
Ashley Wood's "Sencilla Finale" is a beautiful example of analog artistry in a digitally changing environment. Where some artists choose to hide between high-definition flat panel monitors and the ubiquitous mouse, Wood makes a flagrant display of the relationship between eye, hand, mark making device with shameless attacks at blank space with lines, smudges, shapes and scribbles. As a sum, these add up to beautifully drawn figures that create a dynamic visual translation of Wood's thought process. His work is that stars-in-your-eyes gasp for fresh air after being held under water by the pervasive digital bully.
A dissapointment.......2007-04-13
Although he is a very talented and highly illustrator I get the feeling that he wanted to just whip out some drawings to get it published. There are pages where there is only a head or a small figure w/o reason. Most of the sketches (but not all ) looked hurried not worthy as publishing material. Be aware the sketches are only B/W.
Has Anyone Received This Book Yet?.......2006-12-07
I want to give this book 5-Stars because I love the edgy artwork of Ashley Wood but there IS a problem here folks. Weep and read on...
I have been coming back tirelessly to this page for several weeks and the book was listed as a Pre-Order for November 29th. When that date came and passed the Amazon release information changed to "Usually ships within 1 to 3 months". What happened? I scratch my head in utter confusion.
I've checked several other sites and this book is no longer listed as being in-stock. Was it even released? Or has the publishing date been put back to 2007?
Has anyone got their hands on a copy? If so, where did you strike lucky?
Please holla back and throw some light on this mystery.
Cheers!

Excellent Book!.......2007-04-01
This book is excellent. I bought it for a notation class, and it is just what I was looking for. The lessons are gradually challenging, and they present the opportunity to apply the previous material learned and learn new techniques. It is very complete, and most of the steps to follow are properly illustrated. Buy it!!!!
A Huge Help!.......2007-03-27
I have been using Finale for years, 13 now. With all of the changes over the years and the fact that Make Music refuses to have a real book for the program, I bought this. I started from the very beginning and have learned so much. My skills are better and I can input faster than ever. I have learned how to do do thing I never new were possible, and I did not have to try and look up on the useless PDF that comes with Finale. You can also get an update for Final 2006 on line. This is great to start from the beginning and work all the way to the end. You will be a pro in no time. It is fast and easy to work through.
Great COURSE on FINALE!.......2006-11-13
I bought this book after being hired to score a complete musical for an arranger. I did not know FINALE at all. I decided on this book because it was from Berklee Press.... I am a Berklee grad.
This is not just a book.. it's a complete COURSE on Finale. It is structured like you are in class, so it progressively introduces you to the program. Constantly reviewing and reinforcing what you have already learned. I was up and running in no time on the program, and I am happy to report, I'm almost done scoring an ENTIRE MUSICAL!
Highly Recommended!

Helpful and Essential accompaniament to the textbook.......2007-06-07
The exercises in this book are extremely helpful for reinforcing the text. Highly recommended for self-students, and commonly used as a college Music Theory text book.
Hmmmm.......2005-09-20
The book had a lot of writing in it and it was said be "be like new." It was nothing like new, the pages were very beat up and much of the comb bounding was broken or broke soon after getting it. The book was in horrible condition to be like new.
Unhappy customer.......2005-09-13
Very fast service, but faulty product. The workbook had missing pages, and this was not described anywhere in the product description. This caused me to earn a grade of zero for my first two assignments, as the workbook pages weren't in my book. Sure, the seller offered me my money back, but what good does that do me now?
Book Description
After countless hours of using Finale, hundreds of phone calls from musicians asking for help in Finale, and numerous lectures in the classroom teaching Finale at Carnegie Mellon University, I finally took the advice of my many colleagues, clients, friends, and students and set out to write a book on Finale. But not just any book. A book that focuses on Finale as a tool for composers. In order to get the most out of this book, I would suggest that you have at least a basic knowledge of the workings of Finale. While I am trying to cover the more elusive features many users might not know about in Finale, I occasionally have omitted some of the more basic skills that you can easily pick up from the user guide or probably already know.
The majority of the students at Carnegie Mellon University who take my Finale class are composers. I have seen first hand that composers have different needs when using Finale than other users do. They want to quickly and easily work with contemporary notation using Finale. They want to know how to make their parts look professionally printed with the least amount of time and effort usually waiting to the last minute to print them. (Remember, they are students). They want their MIDI playback to be accurate and as real sounding as possible. But, the biggest difference by far is that they ask questions. A lot of questions. By far the most common question they ask is "Can Finale do this?" The answer 99.9% of the time is always yes, but knowing how to get Finale to do it is the real question. This book is my answer to that question. Hopefully, composers, copyists, arrangers and anyone else who would like to learn more of what makes Finale the best program for professional and contemporary music will find learning the more advanced areas of Finale quickly and completely.
