Every baker or pastry chef that spends time reading to improve their skills knows that out of the multitude of available books for each subject, a handful stand out. Books that can dramatically improve one's skills or even open new paths of creativity. This is one of these books. Excellent in every way. From the theory to the recipes and from the explanation to the products this book stands out. I am a professional baker/pastry chef and I have rarely seen such professional work in a book.If one acquires this book ,along with 'Fine chocolates' by Wybauw and 'Making artisan chocolates' by Shotts, then they are on a good road to master the techniques of chocolate and candymaking.
This book includes chocolate work, candy making, nougats, dipped goods, ganaches ,moulded products, jellies and many more. The theory is detailed and clear and the photos are luscius and a treat to the eye.There is a multitude of recipes all using mostly easy to find ingredients and traditional methods, with no preservatives. This book is not the same as Wybauw's. His is similar but, with a special interest in preservation. As another reviewer wrote, the two books are complementary.
Another aspect of the book that I like is that all recipes are in the Metric system, the Imperial system and in percentage formula form. Also all temperatures are in Celsius and Farhenheit.
With almost 400 pages and at this price this is a must for the serious candymaker and chocolatier.
Professional Candy Making Master Class.......2007-08-04
Take the subtitle of this book seriously: 'for the artisan confectioner'. If you are a beginner who is just learning how to make candy, this book is not for you. However, if you have experience successfully making candy (and this includes hobbyists at home or professionals) and want to take your skills to the next level, this book is it. What do I mean by this? Try this: can you make both a soft and firm ganache off the top of your head without a recipe? Do you know the difference? Have you even made ganache before? How many degrees does it take to go from soft ball to hard ball?
Those who know how to make basic candy recipes have little chance to advance their skills. Usually, it involves a plane trip to a different part of the country or even to Europe to get advanced candy training. With this book and a little dedicated effort, perhaps you can skip the plane trip and hotel booking.
Examples:
1) it has extensive tables on various candy failures, and the remedies
2) there are extensive theoretical explanations; not much practical importance, but significant nonetheless
3) it is the only resource I know of that describes all 4 methods of tempering chocolate, along with warnings of common pitfalls
4) all the recipes are proven, professional ones that are production ready for your workplace.
5) there are many color pictures to show you what your finished product will look like (I only wish there were more, one for each and every recipe).
Amazing Book!.......2007-08-03
However, if you are looking for a book just filled with some good recipes, I would recommend "The Essence of Chocolate". Chocolates and Confections follows a textbook style and delves into the chemistry and science of formulating chocolate (and other sweet) confections. A terrific book--it's a heavy read, but you don't have to be attending culinary school to understand what they are talking about! :-D
Great reference, but complex recipes.......2007-07-30
I got this book to expand my scientific knowledge of candy making. It's definately been an asset as far as that goes. The book is strange, it's half text book, half cookbook. There is mega detail regarding why things happen the way they do. That's the part of the book I really enjoy. The part I am not enjoying so much is that the recipes are very complex. They call for about twice as many ingredients as similar recipes I have been using. The book also uses a lot of complex terminology that isn't defined so well for the layman. What exactly IS invert sugar and where can I get it? Almost every recipe calls for Glucose Syrup. I tried inferring from their glossary and basically corn syrup (or many other sugar based syrups will work. It's a big tome, with really great ideas. It's a bit beyond my abilities at the moment, but I think as I study it more, it will make more sense.

Good Book for Amateur Chocolatiers.......2007-09-30
This was a good book about making chocolate confections, mainly truffles. Mr. Shotts goes into detail about the chocolate tempering process, and how to come up with one's own flavor combinations. Many of the recipes sounded a little exotic for my tastes (pineapple black pepper?); I can't see myself spending the money on the chocolate to take a chance on a recipe that my family and friends won't like, but there were some intriguing caramel recipes, and an interesting "Rocky Rhode Island" recipe that I'm planning on trying.
My one quibble with the book is that Mr. Shott does not say anywhere in the book about how to properly store truffles, or how long they'll keep. That aside, I think this book is a fine addition to any amateur chocolatier's bookshelf.
decent book.......2007-09-28
This was a decent book on chocolate making. I would of preferred pictures of the real finished product instead of the flavors such as a honeycomb and a thyme leaf on a plate or a coconut. There are quite a few pictures of many of the finished products. Overall, worth the money.
GOOD BOOK, GREAT PRICE.......2007-08-24
I bought this book along with 'Fine chocolates' by Wybauw and 'Chocolates and confections' by Grewelling. This is by far the easiest and cheapest of the three books. It can be used by both the professional and the skilled amateur. Many of the products can be made without any special equipment and most of the ingredients are easy to find. Care is taken for the products to be flavorful, healthy and of high quality. No preservatives are used.
The book has information tables for troubleshooting and for matching flavors.The theory is somewhat short compared to the other two books but it is precise and helpful. The photographs are exquisite and the layout beautiful.I also like the turtleback binding: it has almost all the advantages of hardcover but is much cheaper.
Another thing that I like ,being European, is that the recipes are both in Metric and Imperial systems of measurement.
Don't think twice about it. If you are interested in chocolate/candy making this book is good, cheap and is worth every penny.Along with the other two books mentioned and practice, a dedicated confectioner can master his art and an amateur reach a high level of skill.

This book is terrific! Great recipes! if you are looking for basics in how to make artisan chocolate this book is great. Fun reading, not too complicate to understand. Great for beginners, specially the chapter of tempering.
I love this book!.......2007-07-30
I am a budding chocolatier, and I was looking for something more my speed than a simple candy book. This book is perfect for me! It's got some very advanced recipes that have helped open up my repetoire. The techniques are very good as well, with lengthy pictures and descriptions on some of the finer parts of candy making like using molds, and tempering chocolate. This book has really opened up my mind and given me lots of ideas for other things I'd like to try.

Classic for your home.......2007-09-21
This is one of those classic cookbooks that belong in everyone's home. I received my first copy in 1973 and by the look of the stained and marked pages, one will see a well used standard. I have given it to many new couples as everyone needs something to teach the old comfort food basics to gourmet show-off dishes. The raised waffle recipe is a long-time favorite of our family. Yes there are zillions of cook books out there, most with narrow fields, but this is one that should be close at hand for everyday use.
Not as good as previous editions.......2007-08-31
I was rather disappointed with this edition of Fannie Farmer. It is poorly organized. I think it is trying to cover too much territory and ends up not giving enough basics, e.g. there isn't much about turkey except how to roast it. I also dislike the type font.
I formerly had a a second edition and one from about 1980 which I preferred. I'll use this new version until I replace my earlier edition.
Over 40 years..........2007-06-27
While in West Africa, in 1970, I received a paper back copy of the Fannie Farmer Cookbook from a Peace Corp Volunteer. Being away from America I missed pancakes, cornbread, stews and foods my parents would cook. At 21 years of age I was not a very good cook. Although our African housewhole had a cook, I wanted to be able to make pancakes and other dishes. Fannie Farmer became my cookery Bible. From her simple recipes, I was able to make not only pancakes on Sunday, but battered fried shrimp, beef stew and other dishes. The pictures of the different fruits, vegtables, fish and cuts of meat, enabled me to identify them when shopping in the African markets. Over the years, I have given this book to my daughters and friends. When making unfamiliar dishes, I still refer to my Fannie Farmer Cookbook. I have about four or five of them. I bought the Anniversary book for my eldest daughter...Fannie Farmer Can Teach You How To Cook:-))
A thorough, thoughtfully updated compendium.......2007-05-14
Each recipe I've tried from this cookbook has been clearly-written and resulted in a successful dish. I'm very impressed with the updating that Marion Cunningham undertook, all while aiming to preserve the original flavors of the recipes. An excellent resource, which I'm tending to prefer over the copy of Joy of Cooking that I received as a wedding gift a dozen years ago.
Best Family Cookbook Ever.......2007-04-03
All the old recipes, and a lot of new ones too. This is the basic of basics, and every person who has to put a meal on the table every night should have it.

I've heard so much about G-Spot being similar to Candy Licker, so I picked Candy Licker first. Despite what some reviewers say, I'm going to purchase G-Spot. Anyway, this is my first book of Noire's, and she is now one of my favorite authors. Everything was great! Hurricane was sick and twisted and Knowledge was the sexy hero. This book made we want to cry and cuss at the same time. This book is definitely not for the faint of heart.

Okay, Okay... I see your point. So, you say Candy Licker was too much like G-Spot...Not for me it wasn't. I definitely couldn't help but see the similarities, but you have to admit...they were two completely different stories. Yes, Caramel and Jimmy rolled with the traitor, but for two completely different reasons. Jimmy was plain crazy, and Caramel...I don't know what the hell was up with her. Well, yes I do, and so do you. Overall, I'd have to say that I prefer G-spot over Candy Licker. I don't know if that's because I read it first or what. But after I read G-spot, I was simply amazed at all Juicy had gone through. Candy also went through some unnecessary b.s., but Juicy grabbed my heart more. I couldn't even go to sleep after I read that book, and it was like 5 a.m. I would definitely recommend reading both books. Both are highly entertaining, dramatically realistic, depending on what environment surrounds you, and both were heart-wrenching stories that made you feel empathy for the protagonists. Don't get me wrong, Candy Licker was an awesome read, but G-Spot just did something to my heart. I read them both in a day, and as soon as I can forget most of what happens in them...I'm going to read them again. Also people...if you like G-Spot and Candy Licker, or either or, then make sure you get A Mouse that Roared by Dwayne Murray, Sr. There's no possible way you wouldn't love it as well. Noire, I'm going to read everything you ever touched with ink, lady. You are what I call a story-teller. And you make me want to say you're my favorite author. Much blessings to you, Noire.

This book had me from the beggining to the end. It was a little similar to the G SPOT but who cares, this book was awesome. Candy was my girl, her sister was an idiot, and Huuricane was a physco path. And let me just throw in that Saucy is a hater, If your a noire fan that read Thong on Fire you will know what I mean by that. GO GET IT

This Author Was A first For Me I never Read Any Of Her Books, An This Book Let me tell you it is the urban novels of all ive read sum cheesey kinda fabio type books but this right here is wat im talkin bout when they say raw an in your face no suga coated its the truth this book is whats up the words are straight forward an in your face. i am very picky when it comes ta books i read, so let me tell you, if you like urban, you like sexy, you like hood,this is the book for you,im reading all your stuff mama that i think is anything close ta this one

Strange Candy Review.......2007-09-21
The title isn't what you expect, at least the candy part. The strangeness of the stories are great, full of color and puzzlement. Without going into detail, I would advise a clear mind. Don't expect the Blake character to dominate the book, there is one story devoted to her and it is pretty nice.
Disappointing .......2007-09-20
I love Laurell K Hamilton and buy and read all her books. I bought this while in between Meredith Gentry and Anita Blake novels. While I enjoyed the stories, it felt choppy. I wanted more and was left frustrated at the end of many of the stories, plus the total volume of new material was less than I would have liked. The writing was great, however, and a couple of the stories really got under my skin. I enjoyed her commentary on each story, the little glimpse into her mind interesting.

I have been a fan of Laurell Kaye Hamilton for many years, and as such was glad to see this collection of short stories released. It contains fourteen short stories, some new and some old (including the very first Anita Blake story!), each lovingly introduced by the author.
This is a great book, one that is sure to please every Laurell K. Hamilton fan. There's a little bit of everything in here - horror, humor and romance. I especially liked The Edge of the Sea (which is something of a sexual horror story) and Selling Houses (selling houses is an adventure in itself when ghosts and vampires really walk the earth!).
Great book, Laurell, keep up the great work!

The book arrived exactly as described, it took a little while to get into the book but once I hit a story like NightSeer I was hooked. I think I read the entire book once I got into in less than an hour. Great read and shows her diversity as an author really well.
Twisty turns and surprises abound........2007-08-07
As a Laurell K. Hamilton fan, I have learned not to attempt to predict what this author will do. She is full of surprises, and that makes for some great reading. These stories illustrate that point well as they vary from light to very, very dark, innocent to... not so innocent. Whatever you fancy, there's much fun to be had within these pages. I highly recommend this collection of Ms. Hamilton's short stories whether you are a longtime fan or are just looking for some good beach reading.

This is my first time reading a book by Kiki Swinson.It centers around Faith Simmons,an assistant principal who is married,lives in a nice home and drive a nice car.Her co-worker and best friend Teresa asks her to try some drugs and from there on out Faith is hooked.I can't lie,the book kept me interested mainly because I wanted to see if she got it together but at the same time I felt that Faith was extremely naive.She acted like Teresa held some kind of power over her.I thought that she would eventually get herself together but she continued to do what she felt was best which was get high.I know her and Eric were going through problems but it would have helped to know when the problems started and they could have tried to work things out before she resorted to using drugs.The author should have went more into depth with her reasoning on turning to drugs.There are alot of unanswered questions and Faith was just too dumb for her own good.She seemed smart but lacked common sense.People know how drugs are and the effects and Faith was truly in denial.It would have been nice to see Faith try to get herself together and if it didn't work she would have went back to the streets.After she tried it that one time she just went down.I know stories don't always have happy endings but I just wish some of the things in this book could have been explained better.This was just an okay read.

This book gives you the story from the perspective of someone that has a comfortable lifestyle and how easily you can lose it all when becoming the victim of drug addiction. Faced with the choice of getting her life back together or losing everything, Faith chooses to continue on her path of self-destruction.
Just Say No!.......2007-06-29
Wow! That candy ain't no joke. This told the tale of Faith and I'll just say man she got out there badd. From being a school principal to turning 4 dollar tricks for a hit of that candy. I tought the story was very interesting. Faith was just to dump for me and I wanted to see just what she would do next so that kept me insightful. This was not what I'm use to from Miss Swinson, but it was surely a good quick read.

I really enjoying reading The Candy Shop by Kiki Swinson! Lots of drama and a page turner! Kiki Swinson is a very good author! I can't wait for her next release. I highly recommend the candy shop!
Candy FLOP.......2007-05-23
This was a horrible book!!! It was like reading an after school special script. You never fully understand why she ever started using drugs. This author wants you to believe either 2 premises. 1. You have an educated sucessful vice principal who can run a school with little to no help from the principal but a friend ask her to try drugs and not any ole drug but hard drugs and she couldn't resist anymore so she just to try it. or premise #2 You have a woman who is so smart she is stupid and she has such high standards for herself but she wasn't strong enough not to do drugs? Huh.
Is it just me or are there chapters missing? Did anyone else not understand what she was trying to escape from? What was her reasoning behind using drugs? Staying on drugs? You never get a true sence of her stress level because this books never goes into that and I really didn't understand what was so horrible about her husband? She didn't seem to suffer from low self esteem because even while tricky she still wouldn't just take 4.00, she thought she was better then that. She also thought she has high morals and standards. So why did she need to use drugs?
Let me tell you what I think.
I think this author tried to use something called irony but I don't think she get's it. As the reader we are suppose to say humn Faith is always downgrading Teresa but there in the same boat. How ironic. Instead I'm just like when is this trick going to die? I also feel the author wanted to write a book with no happy ending which is fine but by the end of the book you know there is no happy ending it might have been better if you thought there was going to be a happy ending and it looks like there is going to be and then BAM no happy ending. One thing I really did not like about this book is all the conversations seemed forced. Lastly, was it just me or was you also wondering when she would stop being so gulliable? I mean most fiends (yah, I know some fiends.AND?) start out gulliable but eventually if they stay in the game end up being scandolous. This chick still just seemed simple and you can't be simple and live on the streets it impossible.

This is an incredible alternative to those expensive trainings offered by the three top very reputable Personal Chef Associations. It in no way should replace that valuable training but it is truly a great start for the person who is just starting out in the industry and doesn't have the means to pay for the training right away!

This book was pretty realistic, nothing exaggerated. It was a raw picture of what addiction is like. But I just didn't enjoy the book's style, and that could be a personal problem, but the book kind of got boring after a while. I ended up renting the movie and not finishing the book.

Firstly, it has to be said - the movie is half baked compared to the book - as is usually the case, but I just had to say it.
This books shows the reader how easy it is for any of us, to make a choice which can effectively turn your life into a spiral going down, down, down ... and how easy it is to take someone there with you, intentionally or otherwise.
It was a great read - very eye opening and incredibly fascinating.

The characters were real and I could feel emotions for them through out the book. The story was very real. It was a sad story but very interesting. Usually it takes me a month to finish a book but with this one I finished it in less than a week. I found myself always reading with every free moment I found. I even sent it to my sister when I was finished.

River and Starr were forced from their home at an early age thanks to their abusive, drug abusing, sex craved, monstrous mother. Separated and struggling, both River and Starr are out on the streets of New York with only one objective, survival. While they are both out jostling their sex to get cash, they never stop worrying and wondering about the other. Is there a reunion in store for these two sisters?
Eric comes from a family of drug dealing murderers. While Eric capitalizes off of his family's legend, he's still a softer version and is content with his small organization and street rankings. When his cousin, Russell, aka Yung Slim, is released from prison, all hell breaks loose as he immediately steps out to reclaim what he deems as his. When he starts taking percentages out of others operations, New York is quickly transformed into a battlefield where tons of blood will be spilled. Will Eric step up to fill the shoes of his ancestors or will this become a battle between relatives?
"It's Like Candy" unravels a bitter tale of money, power, unfaithfulness, sex, and drugs. This is my first read by author Eric S. Gray. While I found the book to be an easy read, there were minimum errors and in my opinion, the story wrapped up too neatly in the end.

At first, I thought this book started out slow, but now I understand he was just preparing me for what was to become. I found myself yelling, stomping, screaming, punching in the air, I was twisted right along with the characters. "It's like Candy, I could feel it when I walk, even when I talk it took over me, It's like Candy". The characters was so real, I found myself rooting for the other team (Rome). Let me say this, Erick S. Gray after reading this books it's no stopping, just keep doing what u do.

This book took the mean streets of Queens, NY to another level. River is a hustler who knows nothing but sex, money, and drugs. She was abused sexually, mentally, and physically by her mother at a young age along with her sister, Star. River gets feed up with her mother and decides to make it on her own in the streets. Star is left behind - with the abuse.
River meets Big Red and Twinkie who takes her in and guide her on the streets. Big Red is an aggressive man who develops strong feelings for River but tries to hide them to the GAME. Twinkie is Big Red's right hand man and together makes them unstoppable in the streets. They begin their hustle in the streets by using River as bait to rob and terrorize "Tricks".
Star life is hell as she is left behind with her sick mother. Star is doing things that adults do at a young age. She is very miserable and wants a better life. She then leave but will she survive on the streets?
River then meets Eric and gain feeling for him - however, he is the assignment. Yung Slim is a PIMP who takes Star under his wing into a life of prostitution. Will Star and River ever reunite?
This book gets better at the end. It has many twists that you have to read it to understand it. I recommend this book to other and await the auther's - Erick S. Gray next book.

I loved this book soooooo much! Excellent from cover to cover! River and Starr both had it hard and it all worked out at the end. I loved Eric and how he sacrificed everything for the woman he loved. This book has more twists and suprises than you are going to know what to do with! Most definitely deserving of 5 stars! This book was straight fire!

We lost our son in June (2007) to suicide. He was 16. This is the #1 resource we have used so far to help us make it through these dark days. Grief is not something you "go through" or "heal" from..... it is something that becomes a permanent part of your being. It is like growing a new and unfamiliar body part. You must let it become part of you and rely on God to learn how to accept it.
Thank you SO much to the authors for knowing how important this was to write. IDEA: I read this book 3 times before fully digesting it. The third time, I highlighted certain parts that I felt were pertinent to my son. I also wrote notes in the margins. Next, my mother read it (in one night, cover to cover).... and used a different colored highlighter and also wrote notes in the margins. We have now passed it onto his best friend who is doing the same.... with a different colored highlighter. It is our way of sorting through my son's very complicated brain and trying to make sense of his death. It is a structured method of sharing our knowledge of him, and why on Earth he chose death over life. It has truly helped all of us. My husband will read it at some point, and someday our younger children will read it.... with the wisdom and knowledge from those of us who knew and understood their brother the best.
I highly HIGHLY recommend this book. I don't think I would be doing this well (not that I am doing great!) at this point without it. God's truth and wisdom in my darkest days.

I love this book. I've never wanted to go to a Christian counselor but God blessed me with Dr. David Cox ( www.drdavidcox.com). This book is not only good for the survivor but also for those who want to survive. I read the book out of curiosity more than anything and discovered the love and pain that people left from suicide go through. It has shown me father god's love with such a passion (http://www.shilohplace.org and http://www.fathersloveletter.com). In his recommendations he also has provided me with a book called Father Hunger (http://www.mcgeepublishing.com) for those who yearn to know who the Father is that really cares. The one who won't leave you alone, the One who has always been there and watched over you and has never let you go. Wait until you discover that God is the one who never leaves you, who is always with you and who gives you the hope -- especially when you feel there is none. Don't be alone - because you're not. Your eyes will open when you see that you are not alone -- God is always there - always has been and always will be.

This is an incredibly helpful book for which, sadly, there long has been a tremendous need. How I wish it had been available thirty or forty years ago. Silence too often follows suicide, which only delays and compounds the challenges of grieving such a loss. The authors rightly stress how vital it is that survivors talk about what has happened. This book is a powerful aid and encouragement in doing so. The earthquake metaphor works beautifully throughout; surely one's landscape is forever changed after a suicide, and in its aftermath it takes a long time for survivors to feel safe. Of the myriad after effects of suicide - including survivor guilt, fear and societal suspicion - all are eloquently articulated. The book's contents are broken up into manageable bites for readers who may be able to focus for short periods. The section on how to talk to children about suicide (and the importance of honesty) was particularly moving and very clear and helpful. Several personal stories are interspersed throughout the text and the variety of voices and perspectives enriches what is already an invaluable book. This is the book I will put into the hands of both survivors and those who want to offer the sort of help that is most needed.
Much needed book for anyone who counsels others!.......2004-04-28
Anyone who counsels others should have this book in their library before it's needed. Dr. Cox knows first hand what it's like to be left behind after a family member completes suicide. When he was only nine-years-old, his father killed himself, leaving a confused, angry little boy. Other stories illustrate the book as he and Ms. Arrington help readers learn the signs that a loved one may be contemplating suicide, with a chapter dedicated to exploring teen depression and suicide. They compassionately guide readers and give them hope for rebuilding their lives when a loved one does indeed commit suicide.
An excellent--and long-needed--book.......2004-01-05
David Cox and Candy Arrington have written a long-needed book. For decades, suicide has been the death no one talks about. AFTERSHOCK dispels the many misconceptions about suicide, including the belief that people who talk about suicide usually don't follow through. Or that when depression lifts, suicide is no longer a concern.
The earthquake analogy used thoughout the book is fitting. Like an earthquake, suicide leaves immediate devastation; its damaging effects are strongest at the "epicenter," the family; and aftershocks continue to be felt. The aftershocks of suicide, the authors say, are isolation, anger, guilt, rejection, betrayal, grief, and loss. AFTERSHOCK explains how to deal with each of these emotions.
Especially important is the section on explaining a death by suicide to children. Suggestions for suicide intervention and for starting a support group of survivors of suicide are also included. Chapter 3 contains excellent advice for recognizing the symptoms of suicidal behavior in teens and responding effectively.
The authors use the term survivor as a person who has lost a friend or loved one to suicide and also as someone who has attempted suicide and failed. Both will find practical help and Biblically-based encouragement in AFTERSHOCK. Pastors and counselors will also benefit from reading this exceptional book.
