Over time, twin enterprises Cook's Illustrated magazine and America's Test Kitchen have published many books dedicated to providing exhaustively tested recipes--"best" versions of traditional dishes plus definitive takes on kitchen equipment and ingredients. Some series readers have complained of endlessly recycled or rejiggered recipes; others take each book at face value, finding the formulas and cooking insights good and helpful. America's Test Kitchen Family Cookbook, which calls itself a cookbook, cooking school, and kitchen reference in one, offers over 1,200 approachable recipes for a very wide range of dishes--from "weekday" fare like Creamy Rice Casserole, Cheesy Nachos with Spicy Beef, and Skillet Lasagna, to dressier recipes, including Pan-Seared Lamb Chops with Red Wine Rosemary Sauce, Roasted Trout Stuffed with Bacon and Spinach, and Chocolate Marshmallow Mousse. There are "specialty" chapters devoted to sandwiches, drinks, and slow cooker and pressure cooker dishes; a grilling section is a tutorial in itself.

Unorthodox, "better-way" approaches abound. For example, a fried chicken formula instructs the cook to wet the bird's dry coating slightly before it's applied for an extra-crunchy crust. Predictably, side bars feature equipment and ingredient evaluations, on bottled salsa, for example; "good food/bad food" photographs show readers what to aim for when producing fare like holiday cookies; and there are tips, charts, and "Cooking 101" sidebars galore. Step-by-step photos offer more direction still.

Though the majority of recipes are sound and yield tempting results, readers poring through the book will note gaffes and curiosities. The recipe for poached eggs, for example, offers the option of extra cooking for "firm yolks" (hard-boiled poached eggs, anyone?) and hamburgers receive an indentation before cooking to avoid "puffy" domed burgers, a novel problem that could, in any case, be solved by proper shaping. The addition of sugar to some savory dishes--for example, a pan sauce for steak--is misguided. Readers should also know that the book, which comes in loose-leaf form, requires some assembly, and that the pages themselves are quite thin, making them vulnerable to spills and tearing in daily kitchen use.

These things said, the book delivers solid, family-friendly dishes with enough fully orchestrated "how- to" to make even novice cooks feel secure when tackling the basics or more ambitious fare.

What's New in the Revised Editon?
First out in 2005, America's Test Kitchen Family Cookbook was praised for its recipe ease, inclusiveness, and wealth of helpful information, but was also criticized for its physical production. A loose-leaf book with its pages included separately, readers found it inconvenient to assemble and its paper impractically thin. The revised edition is printed on heavier stock, and arrives with its pages already on its rings (there are two more now, for sturdiness) with only chapter dividers to insert, a simple task.

In addition, new inside front and back covers provide information on emergency substitutions, roasting guidelines, equivalent measures, and more--and a "Light Recipes" chapter has been included. Without defining precisely what "light" means--fewer fats and carbs, or a combo?--the section offers attractive all-course recipes, such as turkey chili, veggie burgers, meat and cheese lasagna, and chocolate bundt cake. Some readers will welcome the "slimming" of familiar dishes while others will find some of the manipulations--using cornstarch to thicken the sauce in fettuccine alfredo or ricotta to add body to a reduced-fat pesto, for example--unappealing. The book, however, remains a valuable kitchen tool--and one with greater convenience and durability than before. --Arthur Boehm

I have been a subscriber of Cooks Magazine for over ten years now and have never been dissapointed. I am a professional Chef and find most of their publications to be great sources. My still favorite and mostly used source is the original Julia Child Cookbook based on her TV programs of years ago but this America's Test Kitchen publication,I suspect, I will use a great deal.

I really like this cookbook because it has good pictures and explainations for techniques with which new cooks may be unfamiliar. Putting the pages and dividers in yourself is clear and easy. The pages are a little thinner than I would prefer for a cookbook, but I just use a clear plastic page protector that one might use for a portfolio or scrapbook to keep the page I am using clean. I highly recommend it!

What a wonderful, well put together book about Deaf History. I am a hearing person, who is taking American sign language. I have been reading many books on Deaf culture to get a better understanding about the deaf people over time,and the opsticals that they have had/ and still have to overcome. I found this book very well put together and I enjoyed reading it very much. If you are intrested in American sign language, I would recommend others to include this book into your library collection. The photos were wonderful to look as as well.

What began as photographic exhibit at the Smithsonian from the archives of Gallaudet University evolved into the DVD by the same name as this companion book.

This is well done photo collection with written narrative of the 200 year story of deaf among us, with their accomplishments, frustrations and striving to be a part of the American mosaic.

They do pull it off, even against the obstacles of the oralism, and treatment as handicapped rather than language/cultural minority.

Worth having as companion with the DVD.

An enormous and fasinating series of discussions surrounding "raced looking" in America's history of photography is central to this group of essays by many of the cultural critics working today. A massive tome with outstanding visuals, some not seen in the exhibition, provide extensive background and analysis to the area of how race has intervened in American culture today. For museums who felt the race subject had been addressed in the 90s post-Quincentennary exhibition, it is obvious that much more in depth examination is necessary and relevant. An outstanding effort for a museum catalogue and exhibition. All should be commended. Required reading for anyone working and teaching in cultural studies, ethnic studies, humanities, and the arts.

It's really amazing all the work and effort that was put into creating these images. I saw her show at The Whitney like the other reviewer, and i really enjoyed her work so i bought the book on amazon (I'm not trying to plug amazon, but it was a lot cheaper here than other places i looked) The photographs absolutely stand on their own, but the captions are extremely important to the images. The book is simple, as are the images, but it is definately unique and unfamiliar.

Having seen the small exhibition at the Whitney Museum devoted to this body of work (It's currently on view there until early June.), I strongly believe that this book confirms what many people - myself included - have thought of fellow Brunonian Taryn Simon's work ever since she made her spectacular debut with "The Innocents" a few years ago. "An American Index of the Hidden and Unfamiliar" demonstrates that she has become one of our most important documentary photographers, stretching her artistic terrain to encompass much more than the fine environmental portraiture that she demonstrated so well in "The Innocents". Stylistically, Simon is indeed all over the map, but she still has made memorable color images which pay homage to work from the likes of Lewis Baltz, Richard Mishrach, Walker Evans and Richard Avedon to name but a few (I might add too that like most of these photographers, Simon works primarily with a large format camera, using availiable light only to photograph her subjects.). If there is a serious artistic criticism to be made of her latest body of work, then it's probably one related to her sequencing of images (It's a point that I've remembered vividly well from an intermediate photography course I had taken years before, which was taught by distinguished photographer Harold Jones, the founding director of both New York City's Light Gallery and the University of Arizona's Center for Creative Photography.) - though this may be more the fault of her editors than of Ms. Simon herself. If you're unfamiliar with Simon's memorable imagery, then "An American Index of the Hidden and Unfamiliar" is a superb place to begin your artistic journey.

Richard Avedon's In the American West is widely regarded as a landmark project in photographic history and a definitive expression of the power of photographic art. Avedon, who died in 2004, was the greatest American photographer of his generation. For In the American West, he traveled throughout five years, meeting and photographing the plain people of the West: ranch workers, roustabouts, bar girls, drifters, and gamblers. The resulting book includes 120 exquisitely printed black-and-white photographs, an essay by Avedon on his working methods and portrait philosophy, a journal of the project by Laura Wilson, and a new foreword by John Rohrbach. The reissuing of this legendary book, out of print for more than a decade, is a major event in the photography world.

If you like portraits this book is for you. The images are all the same: white background and a person looking in the camera. Take your time to look at it. Focus on the faces and eyes and you will understand the power behind these images. That is what Avedon was looking for. A book with no wording, but who needs words when an image can say 1000 words?

I, like another reviewer, saw this exhibit in the 80's in San Francisco and was awed by it. The images have never left me. Now, as a teacher, I use the images as part of an exercise and educational tool (I have a poster of the exhibit I show to students.) It really helps put other's lives in perspective for my students and opens their eyes to a world of people they might never meet (or will overlook)thereby doing exactly what Avedon set out to do with this work.

In 1978 glamour photographer Richard Avedon shot some portraits in the MidWest. The Amon Carter Museum in Forth Worth, Texas, asked him to follow up on those, and Avedon set out for the American West to portray what amounts to the reverse side of the American dream. The project ran until 1984. By then, Avedon had photographed 752 people in 17 states; a selection of 123 portraits constituted the eventual exhibition and the collection in this book. The illusion of equality and great opportunities for all, and the Hollywood-slash-John wayne dream of the good old pioneering West - a dream shared by a surprising lot of westerners themselves - are effectively shattered by these haunting portraits of barmaids, drifters, ranch-hands, prisoners, mental patients, Hutterites, coal miners, slaughter house workers, 12 year old girls looking twice their age, (sub) teenage boys handling guns and snakes, oil-rig workers, and many others alongside them. There is hardly a face here that is not marked by toil and hardship, the stark black-and-white detailing every crevice, freckle, rimple, mole and scar. As one commentator noted, the West is often represented by its landscape; here the faces are the landscape of the West, and, one might well suspect, its true landscape. Of course, similar portraits of ordinary people living under harsh conditions could be taken in many places in the world; the portraits in this volume take a significant part of their impact from the fact that they come from that "greatest nation on earth", a land associated with glamour, enterprise, success and outward appearances, that we are used to seeing represented rather differently than we find it here.

Here, the great heroic cowboy dream is reduced to a shiny, oversized rodeo buckle worn by a skinny boy. Yet there is nothing condescending or patronizing about these images, on the contrary. The facial expressions mostly speak of deep earnestness and dogged determination, rarely of sadness, and most of the people we meet in this book exude an extraordinary power and pride despite their often dishevelled looks and sweat- and dirtstained clothes (others, however, have donned their best finery). But there is anger, threat, and undisguised, at times overwhelming machismo too, as well as an occasional subject who seems on the verge of tears, like oil field worker Bubba Morrison. The portraits are painfuly candid, often moving, and always artistically well-considered and visually beautiful. They engender instant curiosity about the stories behind these faces - only a very little of that is satisfied in the Background section at the end of the book; we are given a little more in Laura Wilson's delightful volume "Avedon at work in the American west", which is worthwhile considering in addition to the work itself. The subjects are all portrayed against an anonymous white background; nothing is romanticized, nothing is allowed to divert our attention from the sitter him- or herself. At times, the brutality of life in the spare, rough country where these people live is heart-wrenchingly palpable. Richard Wheatcroft, a handsome young Montana rancher was photographed twice two years apart, and it is harrowing to see the hardening of his features over such a short timespan (his portrait of 17 years later that's in Laura Wilson's book, comes as a downright shock, the 41 year-old looking at least in his mid-fifites, a sad, worn out look in his eyes, his face notched by the many blows life has dealt him). More dark portent comes with the highly arresting shots of skinned steer-heads and slaughtered sheep that appear later in the book. Here, the black and white takes away any sense of shock or revulsion, and lends a melancholy beauty even to these stark subjects.

The book itself is beautifully produced: large size, with a cloth cover protected by a thick, transparant plastic dustwrapper. The matte paper is thick and opaque, preventing show-through. It includes a large fold-out group portrait. (My copy unfortunately has a few pages where surplus ink has splattered onto the photograph, but I assume that is the exception, not the rule). In all, a possession to cherish, and highly recommended.

This coffee table book is a good cross-section of sexy pin-up art of a bygone era that knew that showing less was more. These renderings are definitely more enticing than a lot of today's artists who don't leave anything to the imagination by showing a girl spread-eagle on the hood of a car.

Definitely a "must-buy" or at least a "must-peruse" the next time you see it at a bookstore or on someone's shelves.

This is one of the finest collections of pin-up art from the talented artists that brought these beautiful women to life. These were very risque for their time but they were a true celebration of women. This is the kind of open mindedness and genuine appreciation missing from today's society. Women are wonderful, intelligent, beautiful people and life would be a tragedy without them. There...I said it!

This is an excellent overview of the genre, on an artist-by-artist basis, from the classic era of the mid-twentieth century. All of the artists here are deserving of recognition, though only a handful of them are truly well-known and adequately documented in print elsewhere. All of the many artists here are well-represented; the reproduction is flawless, and the commentary is intelligent and well-researched. The original edition is my point of reference here, so I can't vouch for this one fully, but it appears to have maintained the integrity of the earlier printing and is a very handsome production as well.

Through his poetry and photographs, Parks does an excellent job of allowing the reader to some into the world he has experienced over the years. You feel like you've gone off on assignment with him and like you've have expericned the bigotry first hand. The messages he conveys through his work were way ahead of his time, but right on time in today's world. His intelligence brightly shines through both his photographs and poetry. The narratives, photographs and poetry all make for an outstanding compilation of his feelings and views on the world. Marvelous!

If Your the type of photographer who just wants to shoot nice photos this book may not be for you. But if your trying to start a business as a photographer you may want to strap yourself in. I find that ASMP Professional Business Practices in photography: Sixth Edition is the perfect book to get photographers started in addition to lerning how to run a photo Business in the real world. Some of the contents reenforced what I already knew while other contents helped me with some of my weak points. ASMP Professional Business Practices in photography covers a large specturem of different types of photography and I will no doubt refer to the book in the future.
Sometimes young adults will tell me that they want to become photographers and I just tell them to major in business and minor photography, But if you missed that boat this book is the next best thing.

Amongst professional photographers it's almost an axiom that they knew little about the business end of photography when they started taking pictures for a living. This book aims at remedying that condition. It has chapters on assignment and stock photography; pricing and estimating; negotiating fees and agreements; rights and value; formalizing agreements; copyright; electronic technology, business and marketing strategies; book publishing; and professional services. Unfortunately, like a camel, which is a horse built by a committee, this book varies widely in its usefulness for the business of photography. Among other reasons, this is because the chapters, and sometimes parts of chapters, are written by different authors, so that the work is not integrated and some important business areas are omitted.

The first two chapters which deal generally with the nature of stock photography versus assignment photography are quite good and will be helpful to anyone making the transition from one type to another.

Some chapters are first rate. The chapter on pricing and estimating takes an economic approach rather then asking, "what are my competitors charging?" It asks the question what price does the photographer need to establish in order to support himself and his business. Unfortunately, the book is not blunt enough to say that, if you don't expect to get the resulting price, you shouldn't be in the market.

At the other end of the scale is the chapter on marketing. Apparently six different authors each contributed their own uncoordinated efforts. There's some good advice here, but my litmus test was whether the book contained some discussion of how a fine arts photographer finds and approaches galleries. There wasn't much help here.

One area that many photographers encounter trouble with is keeping the books and paying income taxes. Unfortunately there were no references to these subjects. Even if all the book did were refer to a basic text or software, like Quicken or Quick Books and Turbo Tax, which were readily available at the time of publication, it would have been helpful.

This book is a useful guide for the professional photographer to keep on his shelf for a quick answer to many questions he may encounter in business. But for detailed answers, professional photographers will require more help in running their business.

What a refreshing twist on the usual coffee table photography book. Sternfeld's photographs of the natural and manmade environment are so interesting. They almost have an old-fashioned hand-colored postcard-feel to them, but the images are often startlingly futuristic. Great contrasts of the ugly and rusting and vacant with beautiful natural landscapes. The publishers did a wonderful job of cleanly presenting the photos to speak for themselves and putting all the verbiage up front.

JOEL IS A GOOD NAME AND THIS IS A FABOULOS WORK.This man is travelling a lot!!!I want only says that J.Sternfeld is able to meet people and discover particulary little object too that can be fundamental for go inside these pictures,he use colour in a cool way too,soft traditional in colours but in meanings is not really traditional expecially if we related his work in the world of landscape's photography.He use landscape like it was reportage.It is a way for put something else inside.That picture could be sometime strong somentime enchanting but always are intresting me.Put something strange in your picture and maybe that landscape could change his own value.

if you want to know where the comtemporary obsession with large format color "street" work came from, this is it. newer books, by artists like alec soth and other color documentary artists, are excellent, important books, but it must at least be noted that the true groundbreakers were working a generation ago, putting out these kinds of books before it was the accepted trend. and simply put, this work along with shore's 'uncommon places' and eggleston's 'guide', are still, in my opinion, unsurpassed.

on top of that, the size and reproduction quality of this book are mind-blowing. i can't imagine any photography fan not loving this book, or any serious student not wanting it (for a decent price, of course, which this actually is with the discount.)

This a great photography book, but the parcel in which it was sent was not strong enough, and the book arrived a little bit damaged.
