When Michael Milken was diagnosed with advanced prostate cancer in 1993, he wasted no time switching from his daily egg-and-bacon-sandwich breakfasts to a low-fat, vegetarian diet. He also founded CaP CURE, the Association for the Cure of Cancer of the Prostate. Through research supported by CaP CURE, Milken learned that cutting down on fat was not enough--that soy protein could be an important missing ingredient in his diet. He duly incorporated all of the cancer-fighting ingredients into his diet, but he missed the joy of eating.

Enter Beth Ginsberg, Culinary Institute of America (CIA) graduate and natural foods chef. When Milken hired her in 1995, she turned his medicinal soy drinks into tasty, healthy fruit smoothies, his tofu-spread sandwiches into Vegetable Reubens--with tempeh bacon! It became clear that a healthy, cancer-fighting diet need not mean an end to culinary pleasure. In the beautifully photographed The Taste for Living Cookbook, Ginsberg collects more than 75 of Milken's favorite dishes, from Tofu Dog Casserole with a Pretzel Crust to Greek Spinach Pie in a Phyllo Nest to Devil's "Fool" Cake with Cocoa Frosting. Colorful icons next to each recipe let you know how long a dish will take to prepare--many are under an hour from kitchen to table. I bought what turned out to be a beautifully photographed, almost coffee table-like book . . . but not only do I have a hard enough time finding exotic ingredients where I live but I surely don't have the time to do the recipes Mr. Milken's personal chef turns out every night. If only I'd read a little further in my frenzy to find out everything I could about prostate cancer! My husband is newly diagnosed with the disease and we're attempting to turn our diets in a more healthy direction but it still has to be realistic cooking or it just won't happen at the end of a long work day. The best cookbook I've found out there is "Eat to Beat PC Cookbook" by David Ricketts. I need a cookbook I can really use for us to make this battle.

The book presents recipes attractively. I've tried a few and they were easier and better than I expected, given the somewhat unusual ingredients for familiar foods. The book goes astray, to some degree, in my opinion, because it works too hard at recreating unhealthy high fat foods with low-fat, high-soy, equivalents. Better to just present vegetarian recipees that don't try to seem like something else.

I purchased this book because it contained recipes like flan that didn't require any dairy products. It also provides some great tips for substituting out ingredients like cream and other milk products without sacrificing texture and taste.

At first, I was a bit concerned that most of the recipes in the book called for ingredients that I had never heard of, but even the small health-food section of my local grocery store had almost everything that I needed.

The taste For Living Cookbook Mike Milken's Favorite Recipes For Fighting Cancer is a nicely photographed book. The recipes are basic health food fare. Cut down on fat,avoid meat, eat lots of veggies and soy. If I was a wealthy man I would have a professional chef move into my home and cook these complicated meals im my professional kitchen. I would also go to a medition center in Massachusetts "based on Ayurveda tradition" and I would "invite a doctor trained in both Western and Ayurveda medicine to move into...our house for a few months" I don't mean to be cynical but I have neither the time or money to follow this books recipes. I did not find this book very helpful .

In Moosewood Restaurant Low-fat Favorites the Collective emphasizes a few changes in basic cooking techniques to apply to everyday recipes and they offer tips and ideas for sustaining a low-fat lifestyle. They bake rather than fry, replace high-fat ingredients with healthy substitutes (no artificial ingredients allowed!), and use butter and oil very moderately.  What is lost in fat is gained in bold, intense flavors.  "When fashioning low-fat recipes, taking a nip here, a tuck there, we sometimes need to add a little embroidery, an embellishment such as extra herbs, spices, fruit or vegetable purée, vinegar, sun-dried tomatoes, dried mushrooms, miso, soy sauce, or garlic," explain the cooks at Moosewood Restaurant.  "Our gingerbread gets extra flavor and moisture from chunks of pear rather than from butter and egg yolks.  Two small calamata olives enliven the Caesar Salad Dressing.  A little sauerkraut adds interest to an Italian mushroom stew."

Fat will not be missed in mouthwatering recipes like Guacamole with Asparagus, Chinese Orzo Vegetable Salad, Spring Vegetable Paella, Indian Potato Pancakes, and Creamy Dairyless Rice Pudding. Along with those creative dishes, one of the most appealing parts of Moosewood Restaurant Low-fat Favorites is finding low-fat variations on familiar favorites such as Macaroni and Cheese, Shephard's Pie, and Dark Chocolate Pudding.  An added bonus is that the Moosewood Collective has made sure that the ingredients used in the recipes throughout the book are very accessible--easily found in most well-stocked supermarkets.

The recipes in "Low-Fat Favorites" aren't time-consuming to prepare like the classic Moosewood recipes, making them more weeknight friendly. There are many "tricks" to make a dish seem creamy or cheesy without adding any cream or cheese -- all satisfaction, no fat!

I made Roasted Vegetables Caribbean Style for a potluck the other night to rave reviews. It was easy to prepare and SO good (page 227).

The "Menu Suggestions" feature and the indication of time the recipe takes to prepare are great for planning family dinners or dinner parties, and are included with each recipe.

This is one of my favourite vegetarian cookbooks. I've had this book for 10 years and have probably used it more than any other book I own.

I've had a high success rate with the recipes (I've made about 50 of them) and have only had a couple of disappointments. The menu suggestions are very helpful and make it easy to plan a more elaborate meal. Numerous times I have served meals from this book to meat-eater friends and the food has always been very well received.

Many of the recipes are quick to prepare and are suitable for everyday. Some of my favourites are: Middle Eastern Chickpeas with Spinach, Pasta with Lentils and Artichoke Hearts, Mushroom and Spinach Fritatta, Pasta with Chickpeas, Tabouli, and Thai Vegetable Curry.

Everything I have cooked from the book has been exceptional. And most recipies are quite easy as well. I now always turn to this cookbook first when planning dinner, because I know it will be delicious!! Even my meat-eating boyfriend thinks all the meals from this book are fabulous!

I had the opportunity to eat at Moosewood recently and picked up the book shortly after. I'm not a vegetarian and was skeptical about recreating the lasagne recipe. Wow; it turned out great! Looking forward to trying more recipes. The only reason this book doesn't get a 5 is because it's difficult to hold the pages open when cooking; it would do better as a spiral binding.

I wanted to send this cookbook to all of my sisters and sisters in law for Mother's Day and find here ... This is the best vegetable cookbook I've ever seen, with recipes categorized into groups according to the parts of the world that they come from... eastern Europe, western Europe, Italy, the Middle East, India, the Far East, the Caribbean, and Mexico. Every dish I've made has turned out to be absolutely delicious!

It's not only for the vegetarian, these recipes are great for main and side dishes, buffets, potlucks, and appeal to people with all tastes and backgrounds. I've never made a dish from this book where I haven't been asked for the recipe... A+

This is the best cookbook I have ever used. I never use any other cookbooks anymore! All of the meals are really easy to make, cost effective and totally delicious with a LOT of flavor, which is sometimes unusual for vegitarian meals. At the recommendation of my grandmother, I purchased this book for help in preparing recipes prepared with soy. I was diagnosed with many allergies and I can no longer eat dairy products, corn, mushrooms, etc. (that's only the beginning, the list goes on!). I knew about tofu but I didn't know what to do with it. Using this book as a guide, I prepared a spinach lasagne following the ingredience for spinach ravoli (pg. 35). It was delicious, if I don't say so myself! I would definitely recommend this cookbook. I like using it as a guide to help with new ideas in food preparation. Bona Petite!

I loved this book. I've been a vegetarian for years, and have had to live with the scorn of my food-snob friends, many of whom wouldn't come to my house for dinner parties. So I cooked a feast of Ginsberg's recipes and impressed them all-finally. The Chinese food is especially tasty, although the biscotti was terrific. I brought it to work and everyone ate it up.

I enjoyed the Taste for Living Cookbook so much, I am thrilled that Beth Ginsberg continued to share her creativity in the kitchen in this new book. The WORLD cookbook contains all my favorite Italian, Chinese and Mexican recipes, re-invented with soy protein-- something I know will contribute to a long life for me and my family. And who would have thought we could still enjoy the all-American Chicago deep-dish pizza and Philly cheese steak without sacrificing health?! I have learned so much! Looking forward to Book 3.

.......I prize this cookbook because it allows me to live a healthy lifestyle without sacrificing my love of great cooking and eating. Tofu can be introduced into almost any meal and this cookbook proves it. The trick is in the diverse textures in which tofu may be purchased. Firm tofu is great in a stir-fry, medium tofu works well in ground meat and soft tofu blends wonderfully into many dessert recipes. You get all the benefits of introducing soy protein into your diet, and barely notice the tofu because other flavors aren't sacrificed.

There are 120 recipes in this cookbook divided into chapters such as: Breakfast, Brunch and Lunch; Appetizers, Dips, Spreads and Sauces; Soups and Salads; Vegetables and Side Dishes; Fish and Meat Main Dishes; and Desserts. Each recipe also includes a nutritional analysis. Please note that this is not a diet cookbook. Some of the desserts are low-fat but many are also quite fattening!

Some recipes I've tried and can recommend: Spanish Eggplant, Baked Potato Croquettes, Beans, Lentils and Tofu in a Spicy Tomato Sauce, Low-Fat Turkey Burgers, and Lemon Squares. Overall this cookbook was a pleasant surprise and I can recommend it to anyone looking to introduce soy into their diet!

Best of all, each one comes complete with full nutritional analysis including calorie count, fat and fiber gram count and vitamins per serving. Not only for strict vegetarians, traditional meat recipes are included to demonstrate tofu's versatility, such as low fat chicken or turkey burger or stuffed chicken breasts with Alfredo sauce. I found this book a little disappointing. There are a lot of recipes in this book that call for vegan cheese. My kids don't like vegan cheese. I'm trying to find more creative recipes that do not depend on meat substitutes. One funny thing, there is actually a recipe for a whole carrot placed on a hot dog bun as a substitute hot dog! That is what people who make fun of vegetarians imagine we are feeding our kids every night! I would recommend "Vegan with a Vegeance" over this book.

For a busy parent wanting to make vegan meals, this book can't be beat. The recipes are ultra quick and easy and the ingredients can be found in most supermarkets. I've tried the Portobello Mushroom Sandwich, Red Lentil Soup, Carrot-Potato Pancakes, Giant Oatmeal Cookies, Sweet Potato Curry, Winter Vegetable Chowder, and Granola. Every recipe worked and my family liked them all.

It's obvious these are real recipes, used by real families. This is not gourmet cooking but practical meals that you can make in a hurry and that your kids will eat.

Don't miss out on this simple vegan cookbook. Even if you have cookbooks lined up in your kitchen this one is a must have! The recipes are simple and the ingredients are common ones that you have in your pantry.
So far I have made Blueberry Tapioca Pudding which is delicately sweetened (I used Agave Nectar) and has the antioxidant power of Blueberry and the creamy tapioca taste to savour. A main dish that you will keep making is the Zuchinni Eggplant Lasagne that is easy and quick to serve family and friends. This is a great dish to get the kids to eat their veggies! For desert the vegan butter tarts are the best and putting them on a tray with the chocolate peanut butter dipped pretzels with simply WOW your famiy again! Don't forget breakfast fare as there is plent of it. Sticky Banana loaf is sweet and moist and served with a scoop of Vanilla Rice Dream it is again another great desert treat! This is absolutely a Vegan cookbook you do not want to miss out on and just like the title says these are "receipes even your kids will love"!

If you like meatless burgers this book will show you how to make ones as good as the ones in the store, but that are significantly cheaper. The recipes are easy and quick. Nutrition information is included. The are a variety of recipes for using soy, wheat gluten, beans, grains, or vegetables to make burgers. If you have a problem with a particular ingredient you will find at least a few recipes that avoid using that ingredient. Included are recipes for side dishes. It is not high cuisine, but the recipes in this book are satisfying, tasty, easy and cheap.

My wife & I are not vegetarian (and never will be), but we want to eat better so we have been looking for a good vegetarian cookbook to get some fresh ideas for using the produce we harvest from our garden. We originally bought a highly rated vegan cookbook online and hated it. So, we returned it and spent an hour at Barnes & Noble looking through vegetarian cookbooks. This one has a lot of easy recipes that can be prepared with ingredients most people are familiar with. If you're a die-hard vegan this cookbook is not for you. If you're just looking to eat more vegetables I would definitely recommend it.

This book presents itself in the introduction not as a cookbook for a vegetarian diet, but a guide for people who are trying to eat more meatless dishes. That seems about right.

There are some good recipes to be found - mainly in the Soups/Stews and Quick Dinners sections. There are lots of pastas and frittatas (plenty of eggs and milk make this book very ovo-lactovegetarian) and a whole section for Main Dish Salads.

I've had this cookbook for quite some time - looks like an older edition than is sold here. I had never really used it, but recently found some tasty recipes that I wanted to make. I have to say I was rather disappointed by the end result of all three recipes I made last week. They lacked real flavor and, on top of it all, were really labor intensive. Not meals you'd want to make after a workday. I feel that I find so many more interesting vegetarian recipes elsewhere.

I bought this book as a gift for my wife and wow, we love it. The recipes for the soups are fantastic, easy to follow, and delicious! The split pea recipe is particularly good (even if we do tend to throw a smoked ham shank into it)! One word of caution, however, the soup recipes make a LOT of soup. If you are only cooking for 1-2 people, you might consider in halfing the recipe.

This cookbook serves as a continuation of the wonderful recipes from the Claire's Corner Copia Cookbook. Claire presents delicious and fairly simple recipes which use lots of fresh vegetables (as well as whole grains and beans). The recipes are health-conscious, but use dairy and eggs where appropriate for flavor. The finished products always bring back fond memories of eating at Claire's Corner Copia in New Haven, Connecticut (FYI--which is certified kosher by the local Young Israel rabbi Michael Whitman). Try the pumpkin pie recipe (made with tofu)--delicious!
