Book Description
Hervé This (pronounced "Teess") is an internationally renowned chemist, a popular French television personality, a bestselling cookbook author, a longtime collaborator with the famed French chef Pierre Gagnaire, and the only person to hold a doctorate in molecular gastronomy, a cutting-edge field he pioneered. Bringing the instruments and experimental techniques of the laboratory into the kitchen, This uses recent research in the chemistry, physics, and biology of food to challenge traditional ideas about cooking and eating. What he discovers will entertain, instruct, and intrigue cooks, gourmets, and scientists alike.
Molecular Gastronomy, This's first work to appear in English, is filled with practical tips, provocative suggestions, and penetrating insights. This begins by reexamining and debunking a variety of time-honored rules and dictums about cooking and presents new and improved ways of preparing a variety of dishes from quiches and quenelles to steak and hard-boiled eggs. He goes on to discuss the physiology of flavor and explores how the brain perceives tastes, how chewing affects food, and how the tongue reacts to various stimuli. Examining the molecular properties of bread, ham, foie gras, and champagne, the book analyzes what happens as they are baked, cured, cooked, and chilled.
Looking to the future, This imagines new cooking methods and proposes novel dishes. A chocolate mousse without eggs? A flourless chocolate cake baked in the microwave? Molecular Gastronomy explains how to make them. This also shows us how to cook perfect French fries, why a soufflé rises and falls, how long to cool champagne, when to season a steak, the right way to cook pasta, how the shape of a wine glass affects the taste of wine, why chocolate turns white, and how salt modifies tastes.

We're that much closer to Jetson style food pills.......2007-06-19
Herve This is a genius and should be respected simply for the fact that he approaches cuisine with something other than blind awe of traditions that regarded as fact but are little more than a step up from superstitions and old wives' tales. Already a bit on the dry academic side and then translated from French to English, it can occassionally be a difficult read, but the unique nature of the subject makes sure it says a fascinating read. The book is broken up into sections each a few pages long asking if and why a preconceived notion regarding food is true (Does the juices of meat really contract to the center when you cook it?, Does it matter if you slowly heat your stock or use hot water from the beginning?), the nature of flavor (how salt affects sweet and bitter flavors), just what goes on with the food before we eat it (What causes cheeses to taste the way they do tracing it all the way back to the diet of the cow), and theoretical ideas to make the culinary field better (Developing new cooking techniques involving technology such as artificial vacuums and electrical fields). While the book uses specific examples, it's easy to take This's basic technique and apply it to anything food related, which you could imagine is his goal, having founded the field sharing its name with the book.
good, but.......2007-05-20
good, but, not very complete, inaccurate and simplistic. if you have read harold mcgee, it is a bit simplistic, un-scientific, and extremely biased. good for the beginner or home cook. short stories (and lack of scientific guidelines) are good for those without the patience for "on food and cooking"...
Disappointing.......2007-05-11
I was hoping to find something along the lines of Harold McGee's "On Food and Cooking". If this is what you are looking for, look elsewhere.
Trick in the kitchen.......2007-03-20
This hardcover is divided in small paragraphs which are dealing with the different topics in kitchen science. The first section is dedicated to the tricks in cooking and is the one I like better. Then the author goes through the new discoveries about how do we perceive taste and flavour.
Good start to get in the argument of molecular gastronomy;)
Good but overrated.......2007-03-09
This book is supposed to be the bible on molecular gastronomy. While the book is interesting, the book is bit lighter on some of the topics than I would have hoped. While I must admit that in comparison to the other books on the subject, this is probably the best out there (except for maybe the El Bulli book), I just keep feeling that this could have been more.

Perfect book.......2007-07-17
This book is everything I hoped it would be. I am a novice painter, working in acrylics, and wanted some basic info on color theory. This is it. The information is comprehensive yet easy to understand with exercises for the reader to do in any medium. I was so impressed that I bought her Exploring Color Workbook to go with it. This is highly recommended for the artist wanting to expand her color theory expertise.
Wonderful exercises .......2007-05-14
I bought this based on other reviews about it. I don't know doodley about color and have always gone on gut instinct...and I've painted over a lot of ruined canvas and wasted a lot of paint.
This is an excellent little book with a lot of exercises to make it all quite clear. Every page teaches me something - I have so far had quite a few "AHA" moments. I am beginning to understand why sometimes a color works and sometimes it is just a little off...
I recommend this for everyone. Thank you Nita Leland.
Exploring Color Book.......2007-01-26
This is one of the best books available to artists who want to learn to mix colors without creating mud, to maintain transparency of colors, and to mix grays. The workbood that goes with this book is great for any beginning watercolor artist. I recommend this book with all of my beginning students.
Color up a notch.......2007-01-23
When I read this book I considered myself and intermediate painter. This book cranked me up a notch. It is full of useful, well stated information that inspired me to try new things, and refine what I already knew. It would be useful to new and intermediate painters.
Awsome art technique book, widely applicable.......2006-07-14
Wow! "Exploring Color" lived up to all of the 5-star reviews, and surpassed them all. I've never been able to say that about a book before. This book focuses mainly on the use of color in artwork -- why some color schemes work, and why others fail. Many other topics are covered and related to back to the use of color, such as composition, presentation, design and types of contrast. Example pictures are taken from a wide range of artwork in different mediums by various artists -- simply wonderful! After each description, the author inserts an exercise for the reader, to help you understand and apply the principle presented. These exercises can be done in any medium (watercolor, oil, pastel, cloth, etc.), and far surpass the "paint by number/follow me" exercises in books aimed at nervous beginners.
"Exploring Color " targets intermediate to advanced artists. Beginers should give it a chance, also. Try it, you'll be wowed.
Book Description
This book presents a unique opportunity to read many original source materials written by authors representing diverse points of view and a broad spectrum of history in the field of education. It offers a personal philosophical perspective on the work of teaching; the function of schools in our society; and the relationships between education and productivity. Unlike most introductions to the profession, the issues raised in this book bring readers face-to-face with themselves and with the challenging dilemmas they will confront as teachers. It provides exceptional coverage of community and the changing social, cultural, linguistic, and ethnic landscape of our society and its impact on schools, children, and teaching. In addition, the book answers the following questions: What are the relationships between culture, society, and education?, What are the dynamics of daily life in schools as institutions in particular organizational and community contexts?, In what ways are gender, language, culture, race, social class, and the relationship between school and work important to education?, and What orientations and strategies can teachers adopt that will enable them to become more transformative educators? For individuals contemplating a career in teaching.

Awesome anthology of essays!.......2007-07-05
Sometimes a little recondite, this book is an awesome report on the disparities between socioeconomic educational experiences. The essays that showed the dichotomy beween the lower and upper economic classes really made me reflect on my own education and its impact on my current economic living situation. It is a profound resource for teachers who strive to understand the expectations and education stratified through American educational institutions.

Great Book on Learning How to Illustrate.......2005-06-04
I first saw this book at the library and thought it was so great I decided to buy myself a copy. It covers everything from the concept to how to make it happen. It also gives detailed info on different materials which I found very helpful. The books includes essays from various successful illustrators which not only provide info on how they proceed but encouragement for the aspiring illustrator as well. This book also covers digital art as well as more classic media. I really like the fact that the author includes exercises through out the book to fine tune skills or learn new ones.

Has guidelines for essays and speeches. Has language visuals like cartoons, ads, media, e-mails. Detailed explaination of every topic plus writing assignment and critical thinking. Great book for college studies and teaching.
A Textbook I Actually Enjoyed!.......2000-09-28
I used this book, coupled with some dry, boring, pretentious linguistics book, in my Anthropology class "Language and Culture." Goshgarian did a wonderful job putting it together. It would be a great tool for any student of sociolinguistics. Some of the books for sociolinguistics have forgotten who they're writing to; they try so hard to sound intelligent and end up making themselves look foolish when nobody understands. This book however, completely avoids that. Goshgarian should be applauded for this work. I can't wait for the next edition to come out!
terrific!.......1999-12-04
this book is highly recommended by cityu of hk students, as it can inspire your interest in writing, surely you can gain a lot and improve your writing skills after reading this book.

Books for my Daughter.......2007-09-22
I bought my daughter's books through Amazon, instead of the campus book store. This book was one of five. I saved 50% by doing this. I would recommend Amazon to any student buying books.
Storytelling/composition/shot definition.......2007-02-28
I teach a digital video class and use parts of the book to talk about principles of composition and defining different types of shots. IT is pretty general but uses lots of visual examples to explain concepts.
Great Learning Tool.......2007-02-03
The book is written in textbook style with questions at the end of each chapter. I found it a fun read. There are a few good short interview pages from professionals working in the field. The author offers great references to other books for drawing and anatomy, as this book deals more with the how and why storyboards are used and like the title says Exploring Storyboarding.
Really Helpful.......2006-08-03
This book teaches you important aspects about storyboarding for movies/cartoons/etc. It covers everything you can think of and gives good examples and explanations. This is good for anyone thinking about directing or storyboarding.
Storyboarding.......2005-11-10
Good introduction to storyboarding with a definite direction towards media, and many specific examples. This is NOT a book on cartooning.

Great book for beginners!.......2007-04-21
Great book! It's great for beginners and spells everything out in an easy to learn way. I enjoyed the examples and all the little extras they added here and there to make everything sink in well.
An excellent text book.......2006-02-20
This book was a text book for my college course Intro to Graphic Design. I loved the book. It's easy to understand and provides a lot of great references, instruction and detail. I learned alot about design from this text. This book provides a good, solid introduction to graphic design.
Great book about design........2005-07-26
This book give you a solid base to be a good designer, inside it you can read about theories and principles of design with a lot of real-world pratical solutions.
The book covers the principles of scale, balance, repetition and proximity; the elements of shape, line, size, color, texture, imagery and typography. At the end of each chapter you have a real-world project to do and a list of questions about the chapter.
At all I can say that this book is a must have and much better than the "Design for non-Designers" book.

Customer Reviews:
Brilliant for school holidays!.......2007-01-10
My 5 year daughter and I have been having heaps of fun creating the art in this book. While my 2 year old son has an afternoon sleep we can complete one of these activities. The materials are mostly household items and the rest are easy to come by. It's very well presented with easy to follow steps. It's got all the old "classics" - paper dolls, papier-mache, spoon puppets and the egg carton caterpillar. A much better way to fill in an afternoon than her watching a movie while I clean the house!
I haven't seen it for sale in Australia and am very glad to get it from Amazon.
We love it!
Great ideas for Preschoolers.......2007-01-08
I work with special ed preschoolers and this book was very helpful in planning art projects with the kids. The instructions are clear, the ideas are fun and there are pictures of what the finished product should look like. I would highly recommend this book to anyone working with young kids; teacher or parent
Little hands, Big ideas.......2006-07-19
This book is perfect for your little ones. My 2 1/2 year old daughter loved the crafts we have already done out of the book. I also work with children as my job and also at my church. I highly recommend this book to all you parents, grandparents, Aunt & Uncles, All care givers, and even the expecting parents. A+ Book.
Simple, realistic art projects for toddlers and preschoolers.......2004-10-10
I have a three-year old daughter with whom I wanted to explore arts and crafts. I looked at many different arts and crafts books before choosing this one to buy. Many other books that I looked at had projects that had complicated instructions or used materials that were expensive. I needed a book that I could pull off the bookshelf, open up, and pick a suitable art project quickly. Little Hands has realistic projects- by that, I mean projects that are meaningful, uncomplicated, and use basic materials that you're likely to have around the house.
WORTH EVERY PENNY !.......2003-11-02
This book had everything I was looking for & more for my four year old. There are So many projects for different levels, with simple instructions. I was delighted to see some projects that I did long ago when I was a child, like paper dolls holding hands, paper snow flakes & sock puppets. The list goes on & on... :)

Customer Reviews:
Timeless book.......2006-07-06
I believe I first read this book in the mid-1990's when I was working as a product manager for a software application. You will not find a better book to start your journey about understanding requirements. It is a great foundational book before you dive into sophisticated methods like Quality Functional Deployment (QFD). It was an amazing book to read at the time. I just picked up the book today to read a few sections. It's still a great read, it is timeless.
Premier Book on Requirements Exploration.......2006-04-06
Note the distinction, this is not about Requirements Management, but understanding how to generate and explore requirements for goodness. I love Weinberg because he always makes you think. He takes an unconventional approach and I have never yet read a book of his where I didn't come away with an epiphany, and a completely different understanding of the fundamental problems. Sections 9.2 and 9.4 are classic and worth the price of the book! If you read these and still can't understand why the requirements problem is Hard, change profession.
Time To Stop Printing.......2005-11-10
I buy a lot of books from amazon, and I rarely make any comments. The material and style of this book are outdated, and it is vague on content. The authors should make a revised version, or the book should no longer be printed.
Bottom line, do not buy it! I am returning my copy.
A "must read" book for anyone who designs systems.......2003-08-10
In a world where there is strong emphasis on project management skills and design skills, this is a welcome book that emphasizes that requirements must come first. The process of defining requirements is vital to success and, with good requirements, quality is assured. I recommend this book to anyone who works on solving problems or in building systems of any kind. Gause and Weinberg are excellent in presenting complex concepts in an entertaining and informative way.
There is a human tendency to want to rush into solutions as soon as an opportunity surfaces. And... the result is usually not what was needed. Then, there is a rush to "add quality" to the result by fixing the flaws. This is costly and often fatal to the project. This book takes the reader down a different road. A road of first defining the objective that is to be attained and being sure that all parties understand and agree to the requirements. If you only have a few books in your business library, this should be one of them. I shared my copy with so many colleagues that I finally had to buy another copy.
Should be 6 stars!.......2003-01-03
Like Weingerg's other books (and I have read them all -- most more than once), "Exploring Requirements" is about human nature, the way we react as individual beings to problems we encounter. Anyone looking for a canned methodology or "step-by-step" process to enable a system definition or design may be disappointed. But anyone who reads this will never react to any type of communication the same way again.
This is definitely not a technical book, nor even an IT book. It should be required reading for anyone whose job involves communication -- and that's just about everyone in business today. I have recommended it to all my managers and direct reports over the years since it was first published. I have also recommended it to trainers in public speaking and executive presentation skills. The writers' style is at once entertaining and instructive. Unless you are looking for a "cookbook," you won't be disappointed.

Student Test Packet for Lazzari's Exploring Art: A Global, Thematic, Approach, 2nd
ASIN: 0534625681 |
Book Description
EXPLORING ART offers a thematic and global approach to teaching art appreciation. It balances Western and non-Western approaches to art, unlike competing books, which concentrate much more on Western art, artists, and historical styles. This global approach acknowledges the diverse backgrounds of today's art students, and explores the similarities that unite culture, as well as difference or distinctions. In doing so, EXPLORING ART ultimately reveals the universality of the human impulse to create art, as well as the persistence of basic themes.

it's brand new and i got it cheaper than in my school bookstore.
It came fast too.
Textbook Ordering.......2006-02-07
I had no problems when ordering from this vendor. The book description was accurate. I had no problems and received the book prior to the estimated arrival date.
This book is crap-tacular!.......2004-08-14
If my sock drawer was organized like this book...there would never be a matching pair of socks. The old socks and the new socks would cling together in a wad of static electricity, making it painful to dare try and pull them apart and match them up in any other way. The book lacks fabric softener, and reading it is itchy torture.
But seriously...this book tries to be "smart" by organizing the chapters into "subjects for art",and it doesn't work.
It's stupid!
