Book Description
Cooking cocaine is remarkably similar to cooking foie gras. Both are costly ingredients and require careful attention. Left unattended, cocaine will go up in smoke; foie gras dissipates into a puddle of fat.
So begins one man's remarkable journey of transformation. Jeff Henderson grew up in the inner–city streets of San Diego. He spent nine years in federal prison for dealing drugs, where he became fascinated with cooking and decided to pursue a career as a chef when released. Little did he know how hard it would be to climb to the top of this profession. He is now the executive chef at the Café Bellagio in Las Vegas.
A combination of Angela's Ashes and Finding Fish, this is the enthralling story of someone who has managed to overcome the most unimaginable adversity. Alive with the energy of street life, the sober reality of prison, and the visceral thrill of being inside the intense kitchens of great restaurants, Cooked is a journey through the America of crime, punishment, and redemption. And at it's heart, it is a very human story of how even the worst mistakes can be overcome.
Customer Reviews:
Great read, compelling story.......2007-09-24
Wow, Jeff Henderson had a real "rags to riches" story. This book captures all the details of how Mr. Henderson went from "nothing to something". It's a good read because the story captures you from the beginning.
I would definitely recommend this book to anyone who is interested in reading a "feel good" story, but i would also recommend it to youths who want to know what it's like to go from "something to nothing" real fast.
This book chronicles the good, the bad and the ugly of Mr. Henderson's life. What I really liked is how he did not make any excuses for his failures (his anger, temper, mistakes, etc). Youths will learn about responsibility from reading this book.
What an interesting life..........2007-09-14
Wow! Well written. It was so great to learn about how a person could change their life into something so positive after it was so worthless.
Awesome.......2007-09-03
I loved this book and would recommend it to familes that have youth in their homes, especially with drug crimes so high in our communities. I have a son that is currently serving a 11 year Federal sentence for crack cocaine and will share this book with him and his children. This is a great book to teach youth in Boys and Girls Club that what they see as far as drugs and living the good life, will come to an end. I work in the school system and ask youth on a regular basis what they want to be when they grow up, most boys say a drug dealer, that's what my father was. I ask where is father now, "in prison" but, I will be smarter than him and not get caught. I tell them from personal experience not what someone told me but they will end up one of two places in jail or dead, and to choose a more promising career, and to remember the choice is yours.
Cooked from the Streets to the Stove.......2007-08-13
This was an excellent book. It showed how someone can change their life no matter what obtacles are in front of them. This book is a book for all ages to read it allows you to see if a person wants to have change in their life it can happen by setting your mind to it, living a clean life and working hard.
I am very glad I saw this guy on Oprah and I decided to purchase the book.
Great Story, Great Read.......2007-07-27
You'll learn more than you thought you would ever want to know about selling crack on the streets, the prison system, and the world of culinary art...quite a trifecta. I wasn't particularly interested in any of these things but the book certainly kept my attention. It seems unlikely to me that Mr. Henderson wrote the book - if he did, he can add author to his list of accomplishments - if he didn't, his ghostwriter did a terrific job.

Customer Reviews:
The title ain't lyin'.......2007-09-19
This is a fantastic beginner raw foods book. None of the recipes require anything more complicated than a blender and food processor. I taste-tested some of the recipes with a few omnivores with great results. The Walnut Paté and Flourless Chocolate Cake paid for the book alone.
Don't be discouraged by the worst book cover design I've ever seen. The recipes are great. They also need a better food stylist, lighting designer, photographer but only b/c they are not doing this book justice.
awesome recipe book!.......2007-09-12
This book is great! The first recipe I made called the "Guacamole Sandwich" was the best thing I've ever tasted! I'll never think about eating cooked food again! All of the recipes are simple, fast and easy to understand.
I love this book!.......2007-09-07
I am a not a hard-core raw foodist. I just think incorporating raw foods is a good way to work towards a healthy diet. I have a few raw food books but this one has the easiest recipes to prepare. It's perfect for a beginner and even as I progress to more complicated meals, I come back to these recipes again and again. I particularly love the "Not Meatballs w/ Zucchini Pasta," "Mediterranean Kale" and "Walnut Pate." There are good desserts too, such as brownies... yum.
Also recommended: Raw Food, Real World-- More labor intensive recipes but excellent; has beautiful photos. Further, if you are ever in NYC, you may want to check out Pure Food and Wine-- I was skeptical (What?! A raw food restaurant? Come on!) but the food was very tasty and the restaurant had a cozy atmosphere...
Great guide for raw food newbies.......2007-08-30
I am new to the raw food world and found this book by Jennifer Cornbleet to be a fantastic introduction! The recipes were enticing, instructions were simple, and the previously daunting task (for me!) of making interesting food in the context of a raw diet was made not only effortless but delicious with the help of this book. The chocolate mousse and marinara sauce became immediate favorites of mine. The not-tuna pate in sushi is another meal I really look forward to. I have continued to be inspired to incorporate more and more raw meals into my diet from this book and recommend it to anyone else who is getting started in this healthy way of eating!
Disappointing.......2007-08-27
Although I do not cook much, I have read and browsed countless cookbooks since a young age. If I had the chance to thumb through this book at a bookstore before buying it, I definately would have put it back on the shelf. Actually, I probably wouldn't have even picked it up as it just looks like a cheaply produced book by an amateur. Its dull, few pictures and many recipes require that you refer to other recipes in the book in order to make your selected recipe. I really hate starting a recipe and then finding out that I need to flip to some other section in the book and prepare another recipe in order to complete the recipe I started.

Customer Reviews:
LOVE THIS COOKBOOK!.......2007-08-23
This is one of my favorite cookbooks I own. I have had success with every recipe I have tried so far. The menu suggestions are great. She even gives suggestions for leftovers! LOVE IT!
Entertaining made simple.......2007-04-18
I love to entertain and I do it just about every weekend whether it's entertaining family or friends. Usually I like to make up my own appetizers or entrees but when I ran across this book I had to buy it. I would have to say some of these recipes might be scary for a first time cook but a lot of them are easy to follow and so great to look at. If you love to entertain then I highly reccommend this cookbook for you.
I love this book.......2007-03-23
This is a book I keep reaching for when entertaining. I've made many of the recipes and they've all been just great. It's set up so that there are main recipes and then lots of other variations. She also suggests appetizers and sides. It really makes for effortless entertaining. It's an especially great book if you are a bit new to entertaining or nervous about it.
need more vegetarian entrees.......2007-01-16
I love the way this book is organized. There are tips for each dish: when to serve it, what to serve it with, how well it saves over time etc. My only complaint is that there were really no vegetarian entrees. I don't know about you, but every time I have a dinner party, there is bound to be a vegetarian in the crew. This book was much more meat and potatoes. I therefore have yet to cook from it, although I'd like to if I get different friends.
Terrific book.......2006-12-09
I love this book. It has become a real 'go to' when I'm having guests but haven't the luxury of time to spend planning or cooking. I've picked up some great ideas for everyday cooking as well. I enjoy cooking and cookbooks and this is at the top of my list in the Entertaining category. Definitely some great recipes and tips here.

Unlike typical "quick" dishes, these emphasize freshness and flavor and avoid highly processed foods. Customer Reviews:
My favorite cookbook this year!.......2007-07-19
This cookbook is great for cooks at any skill level. The recipes are approachable, yet far from standard "quick-meal" fare. Lots of influences, including Thai, Indian and North African lend the recipes tons of flavor. Even though the author offers plenty of ideas to make the dishes even more convenient (buying a cooked chicken or diced onions, for example) the recipes often call for ingredients I usually have on hand, eliminating special trips to the grocery store. Whereas some of my cookbooks sit on my shelf gathering dust, this one is already dog-eared and food stained!
Hands-Off Cooking:Low-Supervision, High-Flavor Meals.......2007-05-17
I have made a good number of the recipes in this new cookbook. They all seem easy to make and then they turn out so delicious. The Vegetarian Chili has become a regular at our house. Last night I made Fish Vercruz; it was scrumptious!!! so I decided I had to spread the word about this great book.
Hands Off Cooking.......2007-05-12
I admit, and all my friends KNOW that I am not a cook, but this book looked like something that may help me make some simple dishes. To my suprise, the recipes are EXTREMELY tasty and simple !! I actually am begining to look forwaed to getting in the kitchen, and not only serve my family excellent food, but also to company !! Thanks so much Sue
The Perfect Book for Busy People Who Love Good Food.......2007-05-12
Every recipe I have tried so far has resulted in a truly superior meal...and true to the book's mission, prep is easy and not labor-intensive.
If you are extremely busy but value a great meal at home, you need to buy Hands-Off Cooking. I have already picked up copies for a couple of friends.
It's the best cookbook I have read/used in a long, long time.
Adding Variety to my Routine.......2007-05-07
I tend to work to much and get in a food rut, repeating the same meals until I can't stand it. I just tried my fourth recipe from this book, another success - the lamb meatloaf, and it continues to prove to have been an excellent purchase.
I buy the ingredients the night before I actually try the recipe. If I try to buy the same day then I get home too late to make the recipe. I like that the recipes seem to be just what the title promises - hands off. I do the prep and then some laundry or gardening - then dinner.

Customer Reviews:
Okay, but not exactly what I was looking for.......2007-07-13
My objective was simple-fast, small amount of common ingredients, appealing meal ideas.
This book called for some strange ingredients, some of the recipes looked tedious, and I really just wasn't very attracted to any of the meal ideas in here. Not the type of food I am going to be able to get husband to eat either, so I wound up sending it back.
I have had great success so far with a few other books:
Diabetic Low-Fat & No Fat Meals in Minutes
The Busy People Series of cookbooks.
The best cookbook to own.......2007-03-08
This is the most used cookbook in my house. It features simple to find and use ingredients and all recipes are quick and tasty, not to mention quite healthy. I have given this book out as gifts to two others already and they both have given it similar reviews.
Enhanced with easy to follow low-fat menus.......2004-12-06

Excellent Healthy Cookbook.......2004-12-06
I have about 12 lowfat cookbooks in my collection. This cookbook and volume 1 in the series are my favorites because the recipies taste great and they are very easy to make. You will love this cookbook!
My favorite cookbook.......2003-12-23
This is the cookbook I depend on. I am a Lifetime member of Weight Watchers, and I used this book (and the other Quick and Healthy) when I was losing weight, and still use it all the time now that I am maintaining. There is enough nutritional information to calculate points. The ingredients are all readily available in our small town. You don't spend all afternoon in the kitchen. Everybody likes the result! I can't say enough good things about these books.

Customer Reviews:
Food for the Heart and Soul.......2007-08-08
I cannot believe the wonderful research and resources found in this book, not to mention great recipes. It also had great ideas on how to stock your pantry with healthy choices, along with kitchen essentials and suggestions for the person seriously looking to change their eating habits and lifestyle to live younger, longer! One of the best vegetarian cookbooks, and healthy eating resources I've found and you don't have to be a complete vegetarian.
Great for would-be vegetarians........2007-07-31
Great cook book with delicious recipes and easy to follow directions. I am giving it four stars because it tends to go on about ingredients and health benefits so there are relatively few recipes. (The "101" is a little bit deceptive because quite a few are extremely basic sauces and dressings, not meals.) If you are already a vegetarian this recipe book may be disappointing. On the other hand, this is the perfect book for anyone who is not yet a vegetarian but would like to be.
Very misleading title, but overall good buy.......2007-07-04
First, let me say that for the resources and cooking tips alone this book was worth the buy. Plus, it's a nice looking book. Tantalizing photos, glossy pages - a sharp presentation.
That said, the title is SHAMEFULLY inappropriate. As well as dangerously misleading if you have hungry people on your hands and/or somewhere to be (and to think the title was the sole reason I bought the book - "quick & easy" cooking). This book is NOT about quick meals. It's about wholesome, vegetarian (well, vegan really) cooking for the family. That sounds good, right? So why the ruse?
One example, of many, is the "Earth Burger" recipe where the "Preparation Time" is printed as "10 minutes." Quick & easy? I'd love to see someone mince & saute both onion & garlic, chop parsley, grate carrots, cook rice, mix in another six ingredients, and then blend everything together in a food processor in just 10 minutes. I really would. Not to mention the shaping/preparing/cooking of the patties, preparation of bread/condiments, etc. The cooking instructions do, however, offer this precious tip: "QUICKLY BLEND all ingredients".
Press that button harder, sucka!
10 minutes? I'm lucky if that burger is hitting my mouth two hours after I started cooking. 30 minutes for "Tofu-chiladas"?! Try 3 hours.
"Who is Vimala Rodgers?", the author's bio asks. Isn't it obvious - she's the FLASH of course. Inadvertent exposure to gamma rays gave her superhuman veggie chopping/sautéing/cooking powers!
My advice: ordinary humans should plan to triple or quadruple the printed cooking times. If you want "quick & easy," look elsewhere. And as far as the recipes go, there are but a few winners in an otherwise tepid corps. What a surprise, however, was the wealth of general information on vegan eating/cooking. It made an interesting read and I still keep this book on hand for reference.
"Who is Vimala Rodgers?" indeed. That should be the title of this book. The first chapter opens with the author QUOTING HERSELF (the introduction opened with a quote from Hippocrates - that's one hell of a transition), the recipes are named after the author's kids, and the cooking instructions are filled with anecdotes from the author's family life. It's a baffling ego-trip for someone who is a no-name in the cooking world. But then, that's what makes this book different from most: personality.
BEST EVER BOOK for Vegans and Regular Vegetarians Alike.......2007-06-26
The book is relatively concise and full of recipes that look & taste delicious. Additionally, I am recommending it because it is unlike any other cook book I have for several reasons: First, it is written by a woman who is not a recipe-book writer by profession, but instead a mother of 8 children who has been a vegetarian for 35+ years. As such all of the recipes have been created & refined by her (some with input from her children) and there seem to be few to none of what I would call `filler' recipes that you find in the books of people who work in test kitchens and churn out bizarre things that look good in photos and seem easy to make but turn out to be anywhere from bland to outright bad.
Additionally, this woman is very knowledgeable about the healing properties of foods, combining foods, etc. and reading the wealth of information she provides before, after, & in-between the recipes (albeit concise enough to peruse & learn from with ease) could enlighten even the most zealous of health nuts. Among this info:
women, meat/dairy, & osteoporosis; why to always eat raw salads before (not after) a meal, details about the evils of aluminum, why not to use cornstarch (and alternative thickeners), fruit combinations including but not limited to: always eat melons alone, eat raw fruit 30+ minutes before or after a meal but never with vegetables/grains, etc., what kinds of combos produce intestinal gas, why apple cider vinegar is the only vinegar the human digestive tract finds agreeable & how all other types actually interfere with the digestive process, hidden sources of MSG (she is adamant about Always Read your Labels), why you should Always by organic peanuts (if you buy nothing else organic, because they are rotated with cotton which is the most heavily-sprayed agricultural product & they tend to absorb these residues up to the point where they can actually become carcinogenic), how to keep pasta from clumping while boiling, what foods are acid-forming (body doesn't like) vs. which are alkaline, why, if your soy cheese is made with casein (extracted from milk & used in the manufacture of wood glue) you had just well not buy it, that the highest mineral content of vegetables lies just under the skin, why not to eat iceberg lettuce, why to eat spinach raw & never cooked, tricks for ripening a rock-hard avocado, why you should NEVER use/eat canola or cottonseed oil, how to make delicious flavored vinegars of your own, that `the grain-and-dairy combination is one of the least-friendly-to-our-body-combinations we can create,' why you should never ingest/cook with/etc. water from the `hot' tap, apple cider vinegar as a low-cost and effective (more so than water) vegetable wash, why yogurt/dairy & fruit together hamper digestion, why you should not eat raw fruit after a meal, thinking it is the `ideal dessert,' how Chocolate & THC (in marijuana) have almost identical effects in the brain (also contained in Michael Pollan's book: The Botany of Desire, which I also highly recommend) and a wealth of other information.
It's short & to the point enough that you can read all the text & recipes in ~2-3 hours and almost everything in it seems very good & different from your standard vegetarian cook book fare (I have 10+ vegetarian cook books and this is by far the best). Also it is 100% vegan except for the fact that she is a huge fan of clarified butter--ghee--which she explains about & how to make & which I'm sure could be substituted with a truly vegan alternative in almost if not every case. Another reviewer thought this (i.e. the relative absence of eggs & dairy products) was a negative aspect of the book, but honestly (although I am not 100% vegan) I appreciate the added heath and conscientiousness of her animal product-free recipes, and find them a welcome change from the excessive amounts of cheese-based vegetarian `meals' offered by typical cook books.
This is The Best vegetarian cookbook I have found--and this woman is a published expert on Handwriting! One of these West-Coast Renaissance women. You should definitely get this book.
Mmmm,
Jay
Some very good and EASY recipes :).......2007-06-18
It's not always easy being a vegetarian and cooking on the go. One can easily get sick of salads and grilled tofu ;) This book gives recipes for all seasons and a good variety, which was nice. I have already tried some of the stir fry recipes and am looking forward to the Zucchini and Basil Pesto! Mmmm!

Prevention's Healthy One-Dish Meals in Minutes delivers on every promise in its lengthy moniker. Hard to believe, but you still need to add a word--delicious. This book is excellent for beginning, unsure, or disorganized cooks, as well as for anyone more experienced and health-conscious. The food is interesting middle-of-the-road fare, mostly using meat, poultry, and seafood in modest 4-ounce portions, and lots of non-fat or reduced-fat products. The Express Recipes, ready in 15 minutes, are amazing. In 20 to 30 minutes, recipes for intelligently updated classics will also win smiles.

My Favorite Cook book.......2006-12-31
I have had this cookbook since Prevention first published it. Although I have many cookbooks, this one is my absolute all-time favorite for quick, healthy, delicious meals. Every week, when I plan my meals, I use at least 3 out of this book. I can't say enough good about it. The food is low fat, healthful, easy and quick to prepare and doesn't require alot of exotic ingredients. In fact there is a list in the introduction of the basic foods you need to have on hand to prepare the dishes in the books. There are even suggestions on the side for the use of leftovers. Get this one! I'm getting another for my daughter.
One of my most-often used cookbooks!.......2004-05-17
My husband and I both love to cook, and we have about six dozen cookbooks representing a wide range of cuisines. Yet I keep coming back to this one cookbook again and again. I've had it for about five years, I think, and probably a month hasn't gone by that I haven't cooked at least a few recipes out of it -- which I can't say for most of our cookbooks.
The meals are generally pretty easy to prepare; very few of the recipes require any special equipment or techniques that would throw off the beginner. There's a nice variety, with at least a few real "keepers" in every category (e.g., soups, sandwiches, stir-fries, meat-and-potatoes, etc.).
I especially like the fact that they give nutritional information for each dish, although I wish they included fiber (and sorry folks, no carb counting). The dishes are lower in fat and lower in calories than usual, and yet they don't require a lot of silly, time-consuming techniques to do so.
Also, many recipes have sidebars with hints about variations on the recipe, or how to use the leftovers to make a new dish.
The one thing I find a little annoying -- or more, amusing -- is that some of the pictures do NOT look like the finished dishes. The funniest one is the recipe for microwave polenta: the picture clearly shows *grill marks* on the polenta, yet the recipe never involves an oven or broiler, much less a grill. But the important thing is that the recipes come out tasting good.
My two favorites are Moroccan Chicken and Indonesian Rice with Chicken. The only recipe that really bombed (and we've probably tried 80% of them by now) was the Javanese Tempeh Curry. But the picture looks so delicious... haha.
Buy this book while you still can; I'm planning to buy all the used copies I can find to give to all my friends and relatives.
Really like this one.......2001-01-24
This cookbook is great for those of us who are busy, but who want healthful and tasty meals. The dishes are quick and easy to prepare and use common pantry items. The nutritional content is provided for each recipe, which is great if you are watching your calorie or fat (or any other) intake. Another feature I like is a "To Your Health" box that provides interesting and pertinent nutritional information about some of the ingredients used in the recipe. I rented this from the library but plan on purchasing it--even though it is out of print now!

Book Description
Enjoy and prepare simple raw foods, the healthiest foods nature has to offer, while living a busy lifestyle. This book is perfect for raw food beginners, busy people, health-conscious slackers, and those on temporary cleansing programs. It makes a great gift for the raw-curious as well, since it is the simplest and least intimidating raw food recipe book on the market. It includes over 120 recipes, almost half of which are or include machine-free options.
Customer Reviews:
A nice book.......2007-08-08
My wife does the cooking, but she has enjoyed the book. They have simpler recipes than some of the other raw foods books and take less time to prepare. I would recommend it.
Absolutely Horrible.......2007-07-27
The title of book itself is misleading. Several receipese require machines, such as the use of a blender. There is really no simple way for busy people to go raw without investing in equipment, time and money. This book is a joke and the receipes were horrible. Who needs a receipe for salad. Don't waste your money.
Good book!.......2007-06-18
This is a really good book for people looking for raw recipes on the go. I'd give it five stars if it contained a few conventionally "breakfasty" dishes that I've seen in other raw cookbooks, such as raw granolas or crepes, but there are none. As such, this may not be the best first raw book for someone who's transitioning, but I would definitely recommend it to someone who is familiar with the lifestyle and is looking for fast ways to make really good food.
Quick and Edible.......2007-05-13
Incredible for people with out a lot of equipment that are trying to go raw.
Not so great.......2007-05-09
This was an alright book, but I haven't found myself using it much.
First of all, a lot of the recipes call for a dehydrator - wait, I thought this was machine-free?
I much prefer "Raw Food Made Easy" - which is truly more machine-free (I bought a food processor for $40 - which you need for those recipes, but have so far held off on the $180 dehydrator) and, as said in the title, easy! I don't think you should bill yourself as machine-free when lots of your recipes require something as expensive as a dehydrator!
I am giving this two stars - I haven't really tried the recipes, so I can't judge them - but the fact that I haven't says something considering I am making recipes every day from the book I mentioned above!

The recipes look very interesting and tasty, however the carb levels are higher than some diabetic diets require. Since it is put out by the ADA I guess that I should have known that in advance.

Book Description
Talk about the luck of the Irish! One of the most beloved of Irish institutions (there are more than one thousand in Dublin alone), the traditional pub has served generations as the venue for local gossip, sporting news, a ceilidh or two, literary soirees, real estate deals, political debates, revolutionary plots, and, lest we forget, for knocking back a pint of Guinness or a "ball of malt." The food's not bad either as The Irish Pub Cookbook so deliciously demonstrates. It's a celebration of over 70 pub classics: thick soups and stews; savory tarts and meaty pies; big bowls of salad (times change!); and desserts of the seconds-are-always-appropriate variety. There's shepherd's pie, fish and chips, seafood chowder, and whiskey bread pudding for those with a taste for the quintessential. Contemporary specialties such as Bacon, Blue Cheese, and Courgette Soup; Salmon Cakes with Dill and Wine Sauce; Braised Lambshanks with Red Currants; and White Chocolate Terrine spotlight modern Irish cooking's richly deserved acclaim. Complete with pub photos, history, and lore, nobody leaves hungry when The Irish Pub Cookbook is in the kitchen.

This is the perfect book for us to use when opening our pub. Excellent resource.
An excellent focus on Irish pub cooking.......2006-07-27
Photos by the author blend with food photos by Leigh Beish in a lovely book which arrived too late for St. Patrick's Day feature, but which deserves ongoing mention as an excellent focus on Irish pub cooking. If you've been to Ireland in the last twenty years, you'll know there's been many changes in the nature of pub grub: just look at the tomato tarts, ham and chicken pie, spinach salad with pears and other dishes you wouldn't have identified with Irish pub foods of the past. Recipes - and photos - come from some of the most celebrated pubs in Ireland and represent a fine cross-section of modern fare home cooks will find quite easy to follow.

A very nice addition to Johnson's Contemporary Irish recipes.......2006-02-21
`The Irish Pub Cookbook' is the fourth Irish themed cookbook I have reviewed from Irish-American Margaret M. Johnson of New York. All four, including `The New Irish Table', `Irish Puddings, Tarts, Crumbles, and Fools', and `The Irish Heritage Cookbook' are of similar trade paperback format from Chronicle Books. They are also similar in that all seem to be collections of recipes from various culinary professionals in Ireland. They all also seem to repeat a lot of sidebar material, although I have yet to see any repeated recipes.
To state a perfectly obvious fact, you probably only want to buy this book if you happen to want to cook recipes prepared at Irish pubs. That is, if you already own a fairly sizable collection of cookbooks, many of the recipes in this book will simply be variations on recipes you already have in either a standard book on Irish cooking or in books on Brasserie or Trattoria cooking. This premise, however, is no little recommendation. My personal experience of pub food in England, to which most of these recipes bear a strong resemblance, is that English speaking pubs offer a quality of food at least as good as their much more widely advertised French Brasserie and Italian Trattoria cousins. Like the famous Italian and French `bar food' recipes, these also have the virtue of being very fast to prepare. Either they cook very quickly or they can be cooked up ahead and reheated very quickly. The best model for Americans of pub / brasserie / trattoria food would be the kind of thing you will find at Chili's, Bennigan's, or Appleby's, except that my experience with the three European versions is that they tend to deal in less greasy and less cliched dishes.
The seven recipe chapters are:
Starters with 10 recipes with several based on seafood such as mussels, oysters, and salmon.
Soups with 9 recipes emphasizing cream based soups, plus four recipes for homemade stocks.
Salads with 9 recipes with lots of recipes using chicken, seafood, and cheese.
Hot Pots, Meat Pies, and Savory Tarts (hot pots are rich, thick stews) with 12 recipes featuring pies, savory tarts, `Irish Stew', and brown soda bread.
Meat and Potatoes with 12 recipes for, you guessed it, meat and potatoes, including pork (bacon and ham), lamb, fowl, and steaks.
Seafood with 8 recipes featuring salmon, cod, haddock, and monkfish.
Desserts with 11 recipes for cheesecakes, apple and pear cakes, puddings, mousses and pies.
If your primary interest is Irish desserts, go for the author's, `Irish Puddings, Tarts, Crumbles, and Fools', although this book includes cheesecakes, which are not in the dessert book.
Johnson certainly writes well about her recipes, although this may not be the best book for a green amateur, as there are few tips on techniques, although a fair knowledge of common kitchen techniques should be more than enough. I do tend to be just a little annoyed at Ms. Johnson's always citing Irish staples in her ingredients list such as `Kerrygold Irish Butter'. I feel that for a `comfort food book, it would have been better not to be expected to chase down a very specific, uncommon ingredient. The book also makes an important point that to the Irish, the pig is commonly divided into `ham' and `bacon'. This can easily be the source of the `Canadian bacon' label for smoked pork loin, as the Irish call everything not part of the rear leg ham to be `bacon'. While explaining this little bit of wisdom, the author seems to be not as clear as she could be in identifying exactly what kind of pork she means when she calls for `bacon'.
A collection of Ms. Johnson's books will give you an excellent overview of contemporary Irish cooking and contemporary Irish hospitality, with a few insights into Irish culinary history. So, if all you want is the recipes, these books are quite good. If you want to go deeper into traditional cooking, start with `Irish Traditional Cooking' by leading Irish cooking school owner, Darina Allen and her husband's `The Ballymaloe Bread Book' by Tim Allen (not the comedian).
