I am a fan of Susan Elizabeth Phillips, and this book did not disappoint! It was funny, and the characters were, as always, well-developed. This is one of her best books, in my opinion.

I felt like I was reading Heaven, Texas, one of my fav by this author, all over again while reading this. Moreover, Heaven, Texas was a better novel then this book by far. And this is why I felt this book only deserved 3 stars by me.
There was no freshness to this story, it all seemed the same. So beware SEP fans, if you've read her other novels, you'll feel like you wasted your money if you bought the hard cover edition. However, if you've never read other works by this author, you'll enjoy this witty, love story.
Natural Born Charmer.......2007-08-12
Another 10 stars!! If I could give it that rating I would. This is the last in the series *I think* about the "Chicago Stars" football team. I just discovered SEP's series about the fictional team late last year, and promptly devoured each one. They are all on my "keeper shelves"....This story is about Blue & Dean, and in my humble opinion...it was just the perfect story to end things. Blue grew up being shuffled around, due to her mother being a peace activist & her father dying before she was born. I can certainly identify w/that nomadic existence as I had somewhat of a "gypsy" childhood myself, growing up. As for Dean, he was the bastard child of a rockstar & a groupie. Not planned or wanted & basically denied a relationship to said "dad"...which made a definite impression on Dean. He grew up to be a fantastic QB for the "Chicago Stars"...and to see what his son grew up to become, humbles the now aging rock star. I even have some elements of this story in my own life...just not w/famous people. So I enjoyed this theme. Someone not being treated the way they should/yet overcoming/and becoming better for it...is such a great story to me. Underdog wins!! Only now the underdog is now on top!! I want to tell you...the potential next buyer/reader about every juicy, incredibly satisfying detail of this book. But at the same time I don't want to ruin the fun of you discovering these rich, amazing, totally genuine people. Sometimes the characters in SEP's books are so incredible, you feel like you know them. These two fractured people find each other, entertain us, and manage to fall in love at the same time. The cast of various supporting characters were great too. Riley was my mom's favorite! Did I mention she's falling in love w/all of SEP's books too? Please buy this book!! I promise you'll love it as much as I did!!

I love all her Chicago Stars books and think this is one of the funniest. The dialogue and interaction between Blue and Boo made me laugh out loud. I hated to finish it but will listen to this one on audio and recommend it to all my friends who are avid readers.

Trying too hard to be hip.......2007-06-01
I generally enjoy this author, but I am getting tired of the Chicago Stars football team and their stories. If you have read "It Had to Be You" or "This Heart of Mine" you might as well skip this one. It is a retread of the same formula she has used before - with a few new innovations - this time Phillips sprinkles the f-word around pretty liberally. I don't really care to read that and it is not necessary to the story or to the character development. All I can think is that her editor told her she needed to do that to appeal to a younger audience. I have been reading her books for almost 20 years. Guess I'm done now.

Yes, we can all agree that mainstream history is nearly 100% BS due to politics, economics, ego, problems with dating techniques, and various conspiracies. Agreed. But, I've been researching the distinct possibility that human history (in terms of civilizations) are much more ancient than we've been told, so coming across this book was very interesting to me. I wondered how Fomenko could be wrong (if at all) because he is very persuasive in his presentations. Then it dawned on me. If at previous times in prehistory, due to the various catastrophies that are well documented (comets, asteroids, planetary disruptions, plasma discharge, pole reversals, etc) the Earth was in a different position in relation to the sun, different tilt on its axis, different orbit, different rotation (in terms of velocity and DIRECTION), and the continents were in different positions, then would this not cause the ancients to see the sky (constellations) differently? In other words, is Fomenko making erronious assumptions about the physics of the Earth in pre-history, which then corrupt his data with regards to dating the relevant astrology? The last event to seriously disrupt our planet occured roughly 3500 years ago, according to other good researchers, so is it possible Fomenko has been confused by this? The vastly different physics of our planet in the not so distant past may explain this confusion, which is not to say the "mainstream" version of history is correct; on the contrary. I am not an expert in these fields, but wanted to see if this idea could spark discussion.

Will people ever read before spamming? Yes, Jesuits could not rewrite world history alone, they had help. Anyway, Dr Prof Acad A.Fomenko does not point to jesuits as the driving force of world wide history manipulation in published volumes 1,2,3;, actually he barely mentions the poor devils. Check it with 'Search inside' feature, please. China is rarely mentioned either, in fact, Dr Fomenko is completely eurocentric. Right, his theory contradicts all mainstream schools of history, because in their actual state they are all built on blatantly erroneus chronology. You don't need a mysterious cabal (conspiracy) to falsify history, the falsification is its modus operandi. It is inherent to history(ians) to falsify (distort) events, as it is inherent to humans to boast as it is inherent to power (authority) to legimize itself by referrring to glorious past made to its own order. Dr Prof Fomenko and team have identified scores of instances of such manipulation in Russian, European, etc.. history, and delivered valid statistical proof thereof. His own 'reconstruction' is completely another story. Forget c14 as a valid method of dating. W.Libby has initially discovered a brilliant method of INDEPENDENT dating. Too bad, c14 method has become a joke after a forced marrige with dendrochronology with consensual chronological scale inbuilt. Radiocarbon method can't stand blind tests, but is so very productive as a rubberstamp.
Accepted History & Chronology Must Be Changed. .......2007-04-09
There is no doubt that history as most know it is a sham, & institution's version of History both University & Church is fradulent & inaccurate. Everything was established with an agenda, The real "Dark Ages" are now when we have access to incredible amounts of information past authorities & more important 'common folk' didn't have but our institutions & educators are slow to evolve because of what has ignorantly & arrogantly been taught for too long. This is on many subjects not just Chronology.
For anyone to question "Why would a Mathematician have anything credible to say of History?" The answer is from Dr. Fomenko's preface in the book: "It would be worthwhile to remind the reader that in the XVI-XVII century Chronology was considered to be a subdivision of Mathematics." These volumes could possibly be some of the most important works to date & should be read by everyone with an interest in History, especially professors & educators who have a duty to the public. I have read both books & must say that 'Chronology 1' has some very eye opening & revolutionary information. Even if these volumes are part true the implications are profound & opens the doors to further investigations & questions which must be done. I speak several different lanquages & must say the logic Dr. Fomenko uses with "inflection" of words & words being read from left to right in one region & right to left in another then written backwards, the removal of vowels & get down to basics of words, or different cities & locations having the same name etc. is correct. Vowel usage has always been optional & varied, actually complicating linquistics & study. The first thing one has to understand is that words never had a fixed spelling in history like we do now, the spelling of words was mutable & regional, as well as names & titles of people were vast, varied & changed, NOTHING WAS FIXED or understood linear. Matters of Life & Death as well as financial profiteering yesterday & today were & are made with ignorant, illogical & conspiratorial views of history & reality, it's time people get closer to the Truth & society collectively grow up.

History as Science Fiction.......2007-01-10
Anatoly Fomenko has written a very intriguing book, full of pictures, charts, and computer 'proof' of his thesis: backwards of AD900 we don't really know what happened or when. Between AD900 and AD1600 there is more certainty, but there is still a lot of fuzzy ground, and things don't get reliable until we get past the 1600's where the printing press made it very difficult for the perpetrators of this timeline manipulation to change anything that had been committed to print. The Dark Ages did not happen. Books were burned for a reason. One organization has doubled the actual length of its existence by expanding the real chronology. Read why.
I had always wondered why Christ died about AD33 and yet men waited until the 11th century to form the Knights Templar, the Cathars, etc and go after the Holy Land by force. Why the 1000 year gap? Turns out there wasn't more than a 10-12 year gap and he proves it using astronomy. This also implies that the planet is not as old as we have been told, and current Christian and other creationist scientists are already championing that idea without being aware of Fomenko's book. The two groups, creationist scientists and the Russian mathematical analysts corroborate each other. Fascinating.
Of course, all this flies in the face of what we have been told traditionally is the 'proper' chronology of western civilization, and most readers will experience 'cognitive dissonance' in reading this book. It means that our history going backwards from AD1600 becomes progressively more incorrect and unreliable until it cannot be trusted at all... in the space of 700-800 years.
Naturally, the curious, open-minded reader will want to know WHO did this, WHY, and did any of the events we think of as really ancient ever happen?
Dr. Fomenko is a respected scientist/mathematician at Moscow State University who has already answered these questions to the satisfaction of his initially skeptical colleagues. Most of them are now believers, a few still refuse to believe (the usual diehards), and of course the western press has ignored Fomenko's work -- for obvious reasons when you read the book. The ones who perpetrated this chronology ruse have a lot to answer for. They are still with us. That's why this book is a well-kept secret.
I gave the book a 4-star rating because I was unable to check out some of his claims; those I checked were as he said. But if even 1/3 of his claims are true, this punches a big hole in what we think is our history, the meaning of western civilization, our educational process (for repeating the ruse as gospel), and the trustworthiness of the organization that perpetrated this ruse, well-intentioned or not.
This book relates to current research into a Young Earth paradigm, to John Keel's discoveries about our planet, and Fr Malachi Martin's insights (in his now out-of-print books). We are indeed sheep who are manipulated and kept ignorant -- for a reason. While knowing what these men have to say may be the "booby prize" (as in: 'what can you do with this knowledge?'), it will provide interesting reading. Didn't someone say: "...and the Truth will set you free."?? For you to judge if this book contains the truth.

There's too much happening here to not have a well executed and informative documentary on this. It may seem like a small issue to those outside of it, but it's implications reach much further than the Cape.
Read this easy to follow and well written account of this project and engage yourself into todays questions about our planet and our political stratosphere.

We used the Cape Wind story in public policy class this winter (b4 this book came out), & students were fascinated. This book does illuminate the major actors, and provides in depth background for why a policy with this many public benefits has been stalled for years. Romney, the Kennedys, Alaskan politicians, and the Cape Cod Times (although they are good about my letters when I go home)should be ashamed of themselves.

I am listening to this CD for the 2nd time because I enjoyed it so much. Very well written story and excellent performance by Anna Fields. The heroine, Blue Bailey, is as sassy and "smart-mouthed" as they come. She is also very intelligent, compassionate, and accomplished. When mega-star quarterback Dean Robillard meets her, Blue is down on her luck and very angry at her ex-boyfriend. The dialogue between the two is priceless - some of the best I have ever experienced in chick-lit!
The other characters are also great and there is even a secondary love story. Wonderful "happily ever after" epilogue. I can't say enough good things about this story or the CD narrator and will definitely recommend it to others!

As usual, another SEP story that had me laughing. Of course I bought it on CD because no one could tell the story the way Anna Fields always did. I'm saddened to hear of her most unfortunate tragedy and she will be missed. I loved the way she played out each character. I really can't believe that anyone else will be able to narrate SEP's stories in the way she did but I do hope they can find someone comparable. I love how the characters all tie in from previous books which allows me to relive the other great books by SEP. Read this. It was hilarious.

This is an excellent resource book for those seeking to learn more about alternative construction methods and materials. It introduces the reader to straw bale, cob, light straw clay (a marvelous material), rammed earth and many other ecologically appropriate materials. It doesn't provide enough detail to help you build with these materials but it will help you choose which might be good for you and guides you to some of the key people and resources. The chapter on natural conditioning of houses is outstanding and provides performance estimates for a variety of building materials in cities as diverse as Denver and El Centro.
david bainbridge is one of the authors of the Straw Bale House and a pioneer in passive solar heating and cooling.

This book is full of lies straight from hell!
God is a good God! He isn't mad at us. He not only loves us, He likes us! He will never leave us nor forsake us, no matter how badly we miss it. His love is unconditional. His mercies are new every morning. Great is His faithfulness!
These are radical statements! They go contrary to the typical Christian teaching concerning God. Usually God is represented as stern, angry, and ready to get us for the slightest misstep. This leads to conclusions and attitudes about God that hinder an intimate relationship with Him.
There are reasons for the Lord being represented harshly. In the Old Testament, the Lord vented His anger and judgment often and in devastating ways. There was Noah's flood; the destruction of Sodom and Gomorrah; a death angel killed all the first born of Egypt in one night; an angel killed 185,000 Assyrian soldiers in one night; and on and on the list goes. There is no doubt our God is a holy God who hates sin and demands justice.
But there is also the portrait of God that Jesus painted through His teachings and actions. He showed mercy on the worst of sinners. He associated with publicans and harlots. The only people to receive His harsh rebukes were religious hypocrites. And His ultimate action of dying for our sins proved beyond any doubt that He came to save, not condemn the world.
How does this fit with the Old Testament view of the harshness and severity of God? Is God schizophrenic? Does He sometimes love us and other times hate us? How can we have a healthy relationship with someone who changes His moods frequently?
These are questions that present a dilemma keeping many people at arm's length from the Lord. The vast majority of people KNOW there is a God. They just don't know how to relate to Him. They are confused because there have been confusing signals sent to them, often by the church.
A minister will say that it was the Lord who sovereignly killed a baby and in the next breath ask if anyone wants to serve this GOOD GOD. We are told that God won't answer the prayer of anyone in sin, yet we are told that we all sin. Where does that leave us?
Without a prayer!
There is a simple answer to these questions and a harmony between the wrath and mercy of God. God is not schizophrenic. There is one true nature of God clearly represented in the Word and that is LOVE! First John 4:8 says,
"...God is love."
He doesn't just love at times. Love is the nature of God! Jesus gave us the greatest representation of the true nature of God ever presented. But what about the harshness of God's judgments in the Old Testament? Many expect God's mercies when we do well, but what about when we sin?
God placed our sin on Jesus and punished Him in our place. God satisfied His own demands for justice, not by punishing us but by punishing His Son in our place. This wasn't a partial payment for our sins, conditional on our holiness being added to it. It was a total payment that leaves us with nothing to do except believe and receive or doubt and do without.
Jesus' payment for our sins forever changed our relationship with the Father. If Jesus had made His sacrifice for sins in the Old Testament, then we wouldn't have seen the wrath of God vented as recorded in the Old Testament scriptures.
Here's an example. In 2 Kings 1, Elijah called fire down from heaven and killed 102 soldiers who had come to arrest him. Jesus' disciples asked to do the same thing and cited Elijah as their example. Jesus rebuked them for even thinking about such an act, saying,
"Ye know not what manner of spirit ye are of. For the Son of man is not come to destroy men's lives, but to save them..." (Lk. 9:55-56)
Jesus rebuked His disciples for trying to follow Elijah's example. This shows that if Jesus had been present on the earth in His role as Messiah, Elijah's act of judgment wouldn't have happened.
There is a difference between the way God dealt with mankind under the Old Covenant and the way He deals with mankind under the New Covenant. One of the biggest problems in the church today is a failure to understand these differences. Before the sacrifice of Jesus there was harsh judgment. It wasn't because the Lord desired to punish us. His nature has always been love. But there was a price that had to be paid for sin, and until that price was paid by Jesus, He had to do something to restrain sin.
It's similar to the way we train our children. If you wait until your child is twenty years old and can comprehend exactly what you say before you begin disciplining him, you and the child will be in big trouble. A child has to be restrained from doing wrong from a very young age. At one or two years old, a child may not understand that it is the devil tempting him to take his sibling's toys. But he can understand, "If you do that again, you are going to get a spanking." He may not comprehend the issues of heaven and hell, but when the devil tempts him with covetousness, he will say "NO!" because of the fear of a spanking.
Likewise, before the new birth, the Lord restrained the amount of sin in the earth through enforcing the strict Old Testament law by harsh judgments. This put the fear of God in men, but. . .
"...fear has torment." (1 Jn. 4:18)
Although the amount of sin may have decreased by those under the law, the sin they did commit became more exceedingly sinful and damaging to their lives through the law (Rom. 7:8-13). Therefore, the law wasn't God's best, or first, way of dealing with sin. Prior to the time God gave the law through Moses, God didn't impute men's sins unto them. That means He wasn't holding men's sins against them or, as the word impute literally means, God wasn't putting men's sins on their account. Romans 5:13 says,
"Until the law sin was in the world: but sin is not imputed when there is no law."
Men were sinning, and that sin was destroying their lives. God didn't want to punish them. He was willing to show them mercy, in a sense on credit, looking forward to the sacrifice of His own Son for their sins. But men began to take the lack of God's judgment as approval.
This can be clearly seen with Cain and his descendants. Cain killed his brother Abel (Gen. 4). Instead of punishment, God extended mercy toward Cain, even putting a mark on his forehead to warn others that God was protecting him. But Cain's great-great-grandson, Lamech, interpreted this as approval of Cain's murder. Lamech killed a man in self-defense and therefore felt more justified in his killing than Cain was. He said,
"If Cain shall be avenged sevenfold, truly Lamech seventy and sevenfold." (Gen. 4:24)
God didn't say that. Lamech said that. Lamech was being presumptuous because of God's lack of punishment upon Cain. Therefore, mankind began to move so far away from a proper standard of holiness that if God had not intervened there wouldn't have been a virgin left from whom Jesus could've been born.
As Paul stated in 2 Corinthians 10:12,
"...but they measuring themselves by themselves, and comparing themselves with themselves, are not wise."
This has always been the case. If one gets by with sin, others will be emboldened to commit more sin. So, before the Lord could produce the new birth where He came to live within us and guide us through the indwelling of His Holy Spirit, He placed external restraints on sin that even lost people could understand. "You sin and you die." That's the way it was. Not because that's the way God really wanted it to be, but sin had to be restrained until Jesus' atoning sacrifice could be made.
God's lack of punishment on sin had also led to a total loss of a true standard of right and wrong. Men compared themselves with others so often and for so long that no one knew what God originally intended. Something had to be done.
Therefore, God gave the law, but not because it was His best. He could have given the law to Adam and Eve in the Garden of Eden when they first transgressed, but He waited 2000 years until the time of Moses. That's because the law had serious side effects of condemnation and guilt. God didn't want us to run from Him but to Him. However, sin was destroying the human race and had to have some restraint before Jesus came. That's why He gave the law.
The law wasn't God attempting to save mankind. It was God showing us that we could never measure up to His holy standard. It was to drive us away from self-righteousness and toward receiving the sacrifice of Jesus by faith. Yet, amazingly, the church has interpreted it in a completely opposite manner. Most Christians think the law is wonderful and something that we are obliged to comply with as much as possible. Not!
The law was given for two main purposes. It caused us to fear God's punishment on our sins, and therefore, to those who listened, it lessened the amount of sin in our lives, thereby diminishing Satan's in-roads. Second, it totally took away all hope of being saved by any virtue of our own. The law made everyone guilty before God with no hope of justice. We needed mercy.
Those were the main purposes of the law. It was not God's list of steps one through ten thousand of what you must do to be right with God. It was God's list of all you have done wrong, proving that you can never be right with God unless He provides another form of payment. It was not to set you free. The law was to bind and destroy you. It was a severe spanking for the whole human race to turn us from sin and self-salvation.
Luke 2:14 says,
"Glory to God in the highest, and on earth peace, good will TOWARD MEN."
1 John 2:2,
"And he is the propitiation for our sins: and not for ours only, but also for the sins of the WHOLE WORLD."
Romans 2:4,
"knowing that it is the GOODNESS of God that leads man to repentence."
Before I learned these truths, I used to say that God would have to apologize to Sodom and Gomorrah if He didn't judge America, because we are just as deserving of judgment as they were. But now that I know the truth, I say, "If God does judge America, He will have to apologize to Jesus, because Jesus satisfied God's demands of justice."

A friend of mine loaned me this book. Thank God, (and, yes, there is one), I didn't expend money to buy it.
As noted, the author is an evangelist. He has no familiarity with the principles of logic or physical science that I can discern.
OF COURSE, there are going to be more weather-related disasters in America than was so in times past, FOR THE SIMPLE REASON THAT THE COUNTRY IS BECOMING MORE CROWDED. The tornado that chews up a subdivision today would have swirled the grass in an empty field just a few years ago, for example. Does this mean God hates us? Hardly, except to folks like McTiernan, perhaps.
This sort of writing dumbs down America in my opinion, and I certainly could not possibly recommend to any intelligent reader.

John McTernan has written an important book that explicitly documents how Americans' disobedience to the will of God inevitably results in divine retribution. The proof is in the news clippings! and in Gen. 12 and Matt. 25. By His mercy, the Lord is giving America one final chance to repent of its sins of tolerance for homosexuality and abortion and failure to stand with Israel. If these warnings are not heeded, judgment surely awaits. This book is a vital wake-up call to the body of Christ and to America at large. The Lord God is not pleased. Share this book with your friends who are on the fence.

"God is angry, at you!" is the underlying message of Gods final warning to America.
This is yet another in a long line of books that uses vague predictions, coincidence and half truths in what seems like an attempt to feed the ego of the author. John McTernan tries to show a
direct link between severe natural disasters and events he perceives to be against God. For example the Big Bear earthquake in Los Angeles , happened on June 28, 1992 Gay Pride Day. Of course he conveniently forgets to mention that during 1992 Los Angeles experienced hundreds of earthquakes, and if you try hard enough you're sure to be able to link each one to an event somewhere in the world.
Mr. Mcternan seems to be an expert at "prophesying after the fact", taking past events and placing them in a context that suits his needs. While I found this book entertaining, I doubt my enjoyment was the goal of the author. Bottom line, if your looking for a few laughs this might be right up your ally. If you looking for right wing religious doomsday warnings, watch the 700 club.

This work is global in scope, both geographically and chronologically, with 1000 entries, covering nearly every imaginable subject. It is a must-have resource for all College and University Libraries, and many environmental studies programs, and departments and scholars that attend to religion, culture, and the environment will want to have a copy of their own. But it written accessibly and would be a valuable resource for community and high school libraries, churches, synagogues, and other religious institutions, as well. But don't take my word for it. Wish I had found it earlier.......2006-02-09
I looked for a long time in all the wrong places for a book that would teach me how to cook, not just by piling up recipes, but by showing me basic adaptable techniques and how to approach different main ingredients. My search was so frustrating that I gave up on my other condition, that the book feature modern, interesting food. This book does exactly that.
He shows you, for example, different types of sauces, then shows you how they are related and how they can be used to build your dish.
The reason I give this an edge over volumes like How to Cook Everything or the All-New Joy of Cooking is that Ash gives his lessons concisely--it's a far slimmer book than those two--and with beautifully motivating illustrations. This book will take you very far in relatively few pages.
Amazon is at this moment offering this book with Molly Stevens' All About Braising. This is a brilliant combination, as Stevens' book goes into great depth on this elemental technique, and both give you a perfect balance of classics and new and/or exotic flavours.

My husband and I have attended two of John Ash's cooking classes in the last several years. If you ever have a chance to go to his class, don't miss it. He teaches with a wonderful sense of humor while passing on all kinds of good information. He usually makes the circuit at the Central Market in Austin, Dallas, Houston and Ft. Worth, TX. We attended in Austin but unfortunately don't live there anymore. His cookbooks are wonderful and are filled with very interesting, different, and excellent recipes. This one is good.
Culinary Building Blocks.......2004-04-23
This is marvelous new approach to teaching culinary techniques. It is very similar to Ming Tsai's new book: "Simply Ming" in that they both provide a new technique, e.g. how to make a marinade, a vinagerette, a sauce, souffle, braising, etc., then provide recipes which use and build and modify this basic.
While Ming is into East-West fusion, here Ash is into inspiring even the one who feels they are not very good in the kitchen to delve into the fun world of great cuisine. Ash is a proficient educator who truly believes in dialogue as a prominent learning tool. Here he aptly anticipates questions and answers them.
His selection of topics is contemporary and popular, as evidenced by his starting point: salsas. This is topped off by a wonderful "Fresh Cranberry and Tangerine Salsa." I really appreciate that each topic provides "VARIATIONS", which stimulate each of us to consider taking off in varying directions depending on our taste likes and ingredient leanings.
Try some of these, which are not difficult once you've began mastering the technique: "Roasted Eggplant Salad with Charred Tomato Vinaigrette;" "Cold Cream of Red Bell Pepper Soup from the juicer"; "Couscous Risotto with Oven-Dried Mushrooms and Tomatoes and Pecorino Cheese"; "Herb and Pistachio-Stuffed Veal Pot Roast"; "Twice-Baked Goat Cheese Souffles with Watercress and Oven-Dried Tomatoes"; "Poached Chicken Breast Salad with Curry Buttermilk, Apples, and Pecans";
There is also a section on Tofu (not one of my favorites) and Simple, Sophisticated Desserts. A wonderful, informative brief section on wine, both for cooking and for matching up with food is well done, as well as a Glossary and Pantry. Only thing missing here is Sources.
The writing is superb as is the color photography. A cookbook to start with, improve with and cook with for a long time.
Master Classes on Culinary Techniques. Highly Recommended.......2004-04-13
Author John Ash's rare combination of a professional chef's experience combined with a teacher's ability to communicate has produced this remarkable and welcome tutorial on how to execute various cooking tasks. The book lives up to the many blurbs from culinary luminaries headlined by a quotable from Emeril Lagasse on the front cover. The book is so good, it enhances my opinion of the commending writers for having the foresight to endorse the book.
On a very glib level, the book is a cross between Alton Brown's knack for explaining with Tom Colicchio's depth of culinary insight. The first stroke of genius is the organization of the chapters into a section on `flavor makers', a second section on techniques, and a third section on important ingredients. Learning about cooking has often struck me to be very similar to learning about chess. For the millions of combinations of ingredients (moves) there are really just a few simple rules one can learn with hundreds of variations posed by the moves of your opponent. One simply cannot learn chess by studying. You can only learn by playing (cooking) and by slowly gaining first hand experience with ingredients and the results of applying techniques. The author has accommodated this analogy by dividing cooking into three areas of discourse, loosely comparable to the opening (ingredients), middle game (techniques) and ending (flavor makers). I am sure this analogy will not bear too much analytical weight. It succeeds if it highlights the fact that you must learn cooking by actually working with foods and experiencing its behavior, smell, and taste.
I have occasionally been disappointed by such promising titles such as Tom Colicchio's `How to Think Like a Chef', but my disappointment has been part of the lesson and not a failure of Colicchio's book. He gives lots of recipes and very few general principles. Ash's book is no different in that there are only a few general principles and plenty of recipes, although the genius of Ash's presentation makes the book satisfying all the way through. While Colicchio and Charlie Trotter and Eric Rippert, great chefs all, have written inspired books about cooking in general, Ash is a professional educator as well as being a talented chef.
One way of viewing Ash's book is to see it as a visit from the Snap-On tool supply truck. Reading the book furnishes your mental toolchest with eighteen (18) tools that can be used in a broad range of applications. My favorite example is the lesson called `Vinaigrettes: Not Just for Salads'. As the title indicates, vinaigrette is one of those `Swiss Army Knife' preparations like a marinara sauce. It can easily be used in a lot of different situations with great results. Ash doesn't limit himself to the olive oil / vinegar / mustard / shallot / salt and pepper classic and it's applications. He brings in citrus as the acid, stocks as part of the liquid, honey, miso, soy sauce, ginger, cilantro, and dried fruits. He extends the lesson to advice on how to pair vinaigrette to the composition of other elements in a dish or a meal. I also welcome his mentioning of a brand of corn oil prepared in a way which calls up the picture of artisinal olive oil production. The oil, he claims, actually tastes like corn. What a concept!
The lessons on the other four `flavor makers', Salsas, Pestos, Marinades, and Sauces all follow the same pattern of broadening our understanding of these preparations. The greatest contribution of all these chapters is not that they show you how to make these specific eight or ten or twelve recipes. The contribution is that they show you how to improvise with these ingredients. I can still remember the revelation I experienced when I realized that pesto / pistu is not just for pasta. I was amazed when for the first time I saw it being used as a garnish to soup. There is a lot of this kind of horizon expanding exposition going on in these pages.
The selection of topics for techniques and for ingredients is equally inspired. In a sense, there is even more illumination in these sections than in `flavor makers' since both sections contain at least one surprising topic. Techniques gives us a lesson on oven drying, a method which I have seen used here and there, now and then, and highlighted as a general tool only in books covering Raw Foods techniques. Ash brings the technique into the main stream as a routine tool for the home cook. The ingredients section includes a chapter on soy foods which has a distinction between Chinese and Japanese tofu, the first time I've seen this distinction made. This section also discusses miso, relatively new to American culinary vocabularies, and Tempeh, which may be quite new to most Americans.
I do not know much about wine, but I welcome it in all sorts of cooking applications. Therefore, I was delighted to find that the final essay was a concise, excellent discussion of wines as they are used in cooking. True to the end, the book's food facts are accurate in it's addressing the question of whether cooking drives off the alcohol. The book's discussion of the issue is deeper than any other I have seen, in that it gives estimates of how much alcohol remains after various cooking techniques heat the added alcoholic ingredient. The discussion is crowned by a clear explanation of what alcohol adds to dishes in language that makes sense to educated lay cooks. There is none of the meaningless statements that alcohol is `a conductor of flavor'.
This book is not a complete text on cooking methods. For that, see, for example, Madeleine Kamman's `The New Education of a Cook' But, this is an exceptional cookbook which really should be read from cover to cover.
